Following the delightful tartness of sour cherries, it was time for another summer fruit to captivate our senses: the humble yet magnificent blueberry. These small, juicy orbs of flavor are nothing short of enchanting. I recently revisited my very first blueberry recipe, a nostalgic journey that brought back fond memories of the tender blueberry bush we planted in our backyard a decade ago—a bush now, sadly, gone. Boasting a rich history that spans an impressive 80 years, Eenigenburg’s Blueberries stands as a beloved destination for blueberry enthusiasts across Chicagoland and Northwest Indiana. Eenigenburg’s Blueberries is a family-run farm which grows 13 varieties of blueberries, that are generally available between July 5th and August 10th each year.

Our appreciation for their exceptional blueberries was so profound that we found ourselves making two separate visits this summer. The first trip was wonderful, but the second time, blessed with brighter sunshine, offered a different perspective. We ventured into a new section of the farm, providing us with a fantastic opportunity to compare various blueberry varieties firsthand, right there in the field. It was a true sensory adventure, distinguishing subtle differences in size, sweetness, and tartness, making each berry a delightful discovery.

Blueberries also found their way into our family’s quintessential summer dessert: homemade no-churn ice cream. This incredibly easy and satisfying recipe is a staple for a reason. The semolina pudding, a cherished dessert from my childhood, holds a special place in my heart. This simple, humble, and rustic treat brims with heart-satisfying deliciousness, enveloping my belly in creamy comfort—it was magical then, and it remains magical now. To elevate this beloved classic, I adorned it with various juicy fresh fruits, alongside nutrient-rich bee pollen, a drizzle of golden honey, and delicate dried rose petals. This thoughtful combination brought my summer vision to a beautiful, flavorful completion.

Innovative Pairings: Carrot & Ricotta Rolls and Banana Bread French Toast

In another creative application, blueberries graced the top of my carrot & ricotta rolls with carrot marmalade, once again a delightful result of my continuing partnership with DUKA. To truly highlight the delicious beauty of the humble carrot, I embarked on making a vibrant carrot & orange marmalade, drawing inspiration from a fantastic recipe by Silver Hills Bakery. Next, I prepared a classic cinnamon roll dough, subtly enhanced with homemade powdered carrot for an extra layer of flavor and color. The dough was then generously filled with a creamy ricotta and marmalade mixture, meticulously rolled, cut into individual rolls, and baked to golden perfection in my charming DUKA folk-inspired tart pan. The synergy of fluffy dough and a rich, creamy filling bursting with sweet carrot and tangy orange flavors was incredibly blissfully satisfying. A scattering of fresh blueberries on top added a touch of freshness and vibrant color.

Blueberries also shone through beautifully and deliciously as a topping on a luxurious banana bread French toast, adorned with caramelized bananas. For a recent breakfast, I transformed a few slices of homemade banana bread into decadent French toast. Alongside, I caramelized a couple of bananas, being delightfully generous with the heavy cream for an extra rich sauce. Once plated, I poured the warm caramel over the French toast, sprinkled chopped hazelnuts, added bright sour cherries and, of course, a generous handful of fresh blueberries, finishing the dish with a sprig of fresh mint. Breakfast was served, a symphony of flavors and textures perfect for a special morning.

Beyond Sweet: Blueberries in Savory Creations and Beloved Cookies

Proving their incredible adaptability, I also incorporated blueberries into several salads, demonstrating their capacity to enhance savory dishes. One such creation was a delightful farro salad featuring tender peas, crisp peppers, sweet cherry tomatoes, and aromatic cilantro and dill, all freshly picked from our garden. The star addition, of course, was the handful of vibrant blueberries we had meticulously collected during our recent picking trip. All these fresh ingredients were lovingly “bathing” in a light and flavorful honey vinaigrette, creating a perfect balance of sweet, savory, and tangy notes. I couldn’t resist adding a sprinkle of dandelion and coneflower petals for a touch of edible beauty—though I’m not entirely sure they were strictly necessary, they certainly added a whimsical touch, lol. This salad also served as a fitting celebration, marking our very first harvesting of homegrown peas—a truly exciting moment!

Last but certainly not least, blueberries were the star ingredient in a batch of cookies based on a beloved family recipe, which I had the pleasure of sharing on the blog years ago. Traditionally, we prepare these cookies during the winter holidays, typically using dried fruits like cranberries or raisins. However, I decided to give the recipe a summery twist, substituting fresh blueberries for the dried fruits. I then served these wonderfully aromatic cookies with a side of homemade blueberry syrup, another cherished family recipe. The cookies were utterly packed with a vibrant, aromatic blueberry flavor, and the addition of ground walnuts gave them an incredibly soft, almost melt-in-your-mouth texture. Each bite was pure magic, a delightful echo of that famous Queen lyric: “It’s a kind of magic, / A kind of magic…”
