As a mom of three, I know how challenging it can be to find meals that everyone enjoys. But I’ve found a secret weapon: skewers! There’s something undeniably fun about eating food on a stick, and these kebabs are no exception. My kids absolutely love our Italian Sausage Kabobs, and they’re always eager to help with the preparation, threading the steak and vegetables onto the skewers.

What sets these steak kebabs apart is the flavorful marinade. A quick marinade is all you need to transform ordinary steak into something truly special. Cubes of tender strip or sirloin steak are soaked in a bold sauce made with lemon juice, soy sauce, fresh ginger root, garlic, and scallions. This combination of ingredients creates a delicious umami flavor that perfectly complements the steak and vegetables.

To ensure that everything cooks evenly, we partially cook the small potatoes in the microwave before grilling. This allows them to be tender and perfectly grilled in the same amount of time as the steak and red peppers. After just 8-10 minutes on the grill, your delicious steak and potato kebabs are ready to enjoy!

Expert Tips for Perfect Kebabs

Making kebabs is easy, but following a few simple tips will ensure success every time you fire up the grill. Here are my top tips for perfectly grilled steak and potato kebabs:

  • Soak Wooden Skewers: Always soak wooden skewers in water for 10-20 minutes before grilling. This prevents them from burning and makes them easier to handle. Plus, disposable skewers make clean-up a breeze.
  • Cut Ingredients Uniformly: Cut the meat and vegetables into pieces that are roughly the same size. This ensures that everything cooks evenly and the kebabs lay flat on the grill.
  • Consider Cooking Times: Choose foods that cook at approximately the same rate. If a particular ingredient requires a longer cooking time, thread it on its own skewer so it can grill for the necessary duration.
  • Leave a Little Space: Don’t overcrowd the skewers. Leave a little space between the pieces of food to allow for even cooking and prevent steaming.
  • Baste with Marinade: Set aside some of the marinade before adding the steak and vegetables, and use it to brush the kebabs while grilling. This adds an extra boost of flavor and keeps the ingredients moist.
  • Let the Meat Rest: After grilling, let the kebabs rest for about 5 minutes before serving. This allows the juices to redistribute, resulting in a juicier and more flavorful steak.

Turning any food into a kebab is a simple way to make a meal feel festive. These Scallion Garlic Steak and Potato Kebabs are a quick, easy, and delicious dinner option perfect for enjoying outdoors.

Steak Kebabs with Potatoes

This recipe provides a simple yet flavorful way to enjoy steak for dinner, perfect for family gatherings and summer barbecues.

Yields: 4 servings
Prep time: 20 minutes
Cook time: 10 minutes

Ingredients:

  • ¼ cup soy sauce
  • Juice of 1 lemon
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 inch piece of ginger root, peeled and finely chopped
  • 2 garlic cloves, finely chopped
  • 2 scallions, white and green parts thinly sliced
  • ¼ teaspoon pepper
  • 1 ½ pounds sirloin or strip steak, cut in 1 ½ inch cubes
  • 16 small white potatoes, about 1 ½ – 2 inches in size
  • 1 large red pepper, cut in 1 ½ inch pieces
  • 8 wooden skewers, soaked for 10 minutes before using

Instructions:

  1. Heat a grill to medium-high heat.
  2. In a small bowl, combine soy sauce, lemon juice, Worcestershire sauce, olive oil, ginger root, garlic, scallions, and pepper.
  3. Place steak in a large resealable bag and add all but 2-3 tablespoons of the marinade (reserve the marinade for basting).
  4. Seal the bag and marinate the steak for at least 15 minutes at room temperature, or up to 4 hours in the refrigerator.
  5. Pierce the potatoes a few times and microwave at 30-second intervals until they are tender when pierced with a sharp knife.
  6. Remove the steak from the marinade (discard the used marinade).
  7. Thread 4 cubes of steak, 2 potatoes, and 2 pieces of red pepper onto each skewer.
  8. Grill skewers for about 2 minutes per side, basting with the reserved marinade. Grill for a total of about 8 minutes for medium-rare, or longer depending on your desired level of doneness.
  9. Alternatively, the skewers can be cooked in a preheated 450°F (232°C) oven for 2 minutes per side. Turn the oven to broil for the last 2 minutes to char the skewers.
  10. Let rest for 5 minutes before serving.

Tips and Variations:

  • Vegetable Variations: Feel free to add other vegetables like zucchini, onions, or mushrooms to your kebabs.
  • Spice it Up: Add a pinch of red pepper flakes to the marinade for a little heat.
  • Marinating Time: For the best flavor, marinate the steak for at least 30 minutes, but no longer than 4 hours.
  • Serving Suggestions: Serve these kebabs with a side of rice, quinoa, or a fresh salad for a complete and satisfying meal.
