This realization has fundamentally reshaped my approach to daily life. Whether I’m taking my dogs for a leisurely walk, enjoying a phone conversation with a friend, meticulously preparing for a personal chef service, baking a batch of cookies, or even crafting a blog post like this one, my intention is to be more present, more mindful, and more conscious of each activity. While convenient, pre-shredded bags of cabbage and carrots tend to become soggy more quickly, diminishing the crispness that makes this slaw so enjoyable. However, if using the pre-shredded variety, you can still achieve excellent results with a simple trick.

To maintain maximum freshness when using pre-shredded vegetables, I suggest combining the cooked chicken, toasted pine nuts, diced red onion, and pomegranate arils in one airtight container. Keep this mixture separate from the shredded cabbage and carrots and the vinaigrette until you are ready to serve. This method prevents the vegetables from becoming overly soft or the ingredients from losing their individual textures.

Ingredients

  • 7 cups shredded cabbage and carrots
  • 2 cups cooked chicken shredded
  • ½ cup pine nuts toasted
  • ½ cup pomegranate seeds
  • ½ cup red onion diced
  • 2 teaspoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  • ¼ cup apple cider vinegar
  • ½ cup avocado oil

Instructions

  • In a large bowl, combine the shredded cabbage and carrots, shredded chicken, toasted pine nuts, pomegranate seeds, and diced red onion. Set aside.
  • In a small bowl, whisk together the Dijon mustard, honey, salt, pepper, apple cider vinegar, and avocado oil until well combined and the vinaigrette is emulsified.
  • Add about ½ cup of the prepared vinaigrette to the slaw ingredients in the large bowl. Toss gently to thoroughly coat all the ingredients. Season to taste with additional salt and pepper if desired.

Notes

You can use a 14-ounce bag of pre-shredded cabbage and carrots, or thinly shred 6 cups of green cabbage and 1 cup of carrots for fresher results.

Extra virgin olive oil can be a suitable substitute for avocado oil in the vinaigrette.
