Remove the parbaked crust from the oven and set aside.
  • Sauté the Vegetables: In a large sauté pan over medium heat, melt the salted butter. Once the butter is shimmering, add the sliced mushrooms and diced onions. Sauté for 7-8 minutes, stirring occasionally, until the vegetables are softened, tender, and beautifully browned. This step develops their deep, savory flavors. Transfer the sautéed vegetables from the pan to a bowl and set aside to cool slightly.
  • Prepare the Filling: In a medium mixing bowl, whisk the large eggs until they are well beaten. Stir in the freshly shredded Gruyère cheese, heavy cream, cottage cheese, Dijon mustard, kosher salt, freshly ground black pepper, and the pinch of nutmeg.
