  • Extra virgin olive oil
  • 4 salmon filets (6 ounces each, with or without skin)
  • Old Bay seasoning
  • 3 scallions, thinly sliced
  • 1 cup cherry tomatoes, cut in half
  • 3 garlic cloves, chopped
  • 1 teaspoon Italian seasoning blend
  • Red pepper flakes, to taste
  • 1 tablespoon Dijon mustard
  • 1 (13.5 ounce) can coconut milk (either full fat or light)
  • 5 ounces of fresh baby spinach
  • Kosher salt and freshly ground pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 425 degrees F. Line a baking sheet with foil and set aside.
  2. Place the salmon filets on the prepared pan. Drizzle with olive oil and sprinkle generously with Old Bay seasoning. Bake in the oven for 14 minutes or until the internal temperature reaches 145 degrees F.
  3. While the salmon bakes, prepare the sauce. Heat a large sauté pan over medium heat. Add 1 tablespoon of olive oil, the scallions, and halved cherry tomatoes. Season with kosher salt and pepper. Sauté for 3 to 4 minutes, until the vegetables just begin to wilt.
