  • 2 15.5 ounce cans of chickpeas, drained
  • ¼ cup tahini
  • 1 cup fresh basil leaves
  • zest and juice of 1 large lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • pinch of red pepper flakes (optional)
  • ¼ cup extra virgin olive oil, plus more for garnish
  • Assorted fresh vegetables (carrot sticks, celery sticks, cucumber slices, snap peas, pita chips, bread sticks), for serving

Instructions

  1. Thoroughly drain and rinse the canned chickpeas under cold water. For an extra smooth hummus, you can optionally peel the skins off the chickpeas, though this is not required.
  2. In the bowl of a food processor, combine the drained chickpeas, well-stirred tahini, fresh basil leaves, lemon zest and juice, garlic powder, kosher salt, black pepper, and red pepper flakes (if using). Process the mixture until it becomes smooth and creamy. You may need to stop and scrape down the sides of the bowl a few times to ensure everything is incorporated.
  3. With the food processor running on low, slowly drizzle in the extra virgin olive oil. Continue processing until the hummus reaches your desired consistency – it should be thick, smooth, and wonderfully creamy. If the hummus appears too thick, you can add a tablespoon or two of cold water or chickpea liquid (aquafaba) until it loosens up to your preference.
