For this delightful collaboration, I decided to embark on a culinary journey back in time, bringing to life one of my mother’s cherished old recipes: a simple yet beloved lemonade cake. While originally featuring only lemon, I envisioned a reimagined version, enhancing its brightness and depth. My creative reimagining led to the addition of fragrant orange zest, alongside the rich, complex notes of Nielsen-Massey’s pure vanilla extract. The process of adapting this cherished family recipe was quite time-consuming, primarily due to the daunting task of ingredient conversions – a challenge that always makes me a little nervous! However, the effort was undeniably worth it, as the final result was nothing short of spectacular, a true testament to the power of thoughtful ingredient choices and a touch of culinary courage.

The Secrets to a Perfect Citrus Cake: Essential Baking Tips

Achieving the perfect cake texture and flavor hinges on several key factors, and my experience has taught me that using super fresh eggs, brought to room temperature, is paramount. For this recipe, I opted for free-range, non-GMO brown eggs, carefully separating the yolks from the whites. This crucial step allows for individual treatment, ensuring optimal aeration and structure in the final cake.

I began by beating the egg yolks with sugar, a process that transforms them into a pale, creamy mixture, incorporating air and starting the emulsification process.

I highly recommend starting with a portion of the egg whites, then a portion of the flour mixture, continuing this alternation, and concluding with the remaining flour. To be precise, the ideal order I’ve found for the lightest texture is: egg whites – flour – egg whites – flour – egg whites – flour. This gentle folding technique prevents deflating the egg whites and ensures the ingredients are evenly incorporated without overmixing.

The pan was placed into a preheated oven set to 375°F (190°C) to bake for approximately 35 minutes, or until the top of the cake turned a lovely golden brown. To definitively check for doneness, the classic “toothpick test” is always reliable: simply insert a clean toothpick into the center of the cake; if it comes out clean, your cake is perfectly baked and ready to be cooled.

Allowing the cake to cool down completely on a wire rack before cutting is a vital step. This prevents it from crumbling and ensures clean, even slices, preserving its delicate structure.

The Art of Decoration: Buttercream Flowers and Picnic Perfection

With the cake cooled and ready, it was time for the creative part: decoration! For the buttercream frosting, I decided to add a natural touch of color using organic beetroot powder, which imparted a lovely subtle pink hue. I then meticulously decorated the cake, drawing directly from the invaluable techniques and insights shared in the Nielsen-Massey “Better Your Bake” tutorial. The process of piping delicate buttercream flowers, inspired by their video, was an absolute joy.

I proudly served the sliced citrus cake on a festive plate, alongside some delightful vanilla cupcakes and an assortment of fresh, colorful fruit, creating a vibrant and inviting spread perfect for our picnic. The combination of flavors and textures was a true celebration of summer.

Despite my best efforts, the day proved to be quite warm, and the delicate hydrangea decorations didn’t quite hold their intricate shape as perfectly as I had initially hoped. The summer heat can be a formidable foe for buttercream creations!

Ingredients

  • 4 eggs at room temperature, yolks and whites separated
  • 1 1/3 cup sugar
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup all-purpose flour, sifted
  • 1 tsp baking powder
  • 1 tbsp Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
  • Zest from one medium-size orange
  • Zest from one medium-size lemon
  • 1/8 tsp salt

Instructions

  • Preheat oven to 375F (190°C). In a medium-size bowl beat the egg yolks with the sugar for about 2-3 minutes or until pale yellow. Add the butter cut in small pieces, and beat until incorporated. In a separate bowl, beat the egg whites until stiff peaks form.
  • In a small bowl mix the flour, baking powder, and salt until combined. Add this to the egg yolk mixture slowly, alternating with the beaten egg whites, mixing gently after each addition. Suggested order for best results: egg whites – flour – egg whites – flour – egg whites – flour. Add vanilla extract and the lemon and orange zest, and mix until just combined. Be careful not to overmix!
  • Pour the mixture into a baking pan lined with parchment paper. Bake for about 35 minutes or until the top of the cake is golden brown. You can check for doneness by inserting a toothpick in the center of the cake – the cake is done if the toothpick comes out clean. Take the cake out of the oven and let it cool down completely on a rack. Cut into squares and serve decorated with buttercream frosting and fresh fruit on the side, if desired.
