As another year draws to a close, a natural inclination surfaces to pause, reflect, and gather insights from the journey traversed. We scrutinize our accomplishments, pinpoint areas for improvement, and cast our hopes for the future. For 2025, my heartfelt aspiration remains to continue sharing compelling narratives that resonate deeply, not just with me, but with each of my cherished readers. This blog, a decade in the making, has evolved into much more than a collection of recipes; it is a tapestry of stories, experiences, and connections woven through the universal language of food.
My blogging adventure began in 2013, sparked by a profound sense of loneliness in the bustling expanse of a new, unfamiliar city. I yearned for the warmth and familiarity of my life back in Europe, missing the family I had left behind. The blog became my “virtual paper,” a quiet sanctuary where I could articulate my thoughts, chronicle the passage of time, and combat the solitude that threatened to engulf me. It was an attempt to bridge the geographical distance with words, to create a sense of presence even when physically absent from those I loved.
Eleven years later, the landscape of my life, profoundly shaped by food blogging, is rich with gratitude. This platform has unexpectedly opened doors to incredible opportunities: I’ve connected with inspiring businesses, had the distinct honor of judging various culinary competitions, and attended prestigious events both locally and internationally. These experiences have not only broadened my culinary horizons but have also reinforced my belief in the power of shared stories to build communities and foster understanding. From the initial solitude, my blog has blossomed into a vibrant network, proving that food truly is a powerful conduit for connection.
The Art of Food Storytelling: Connecting Through Culinary Narratives
My approach to food blogging has always been rooted in the art of storytelling. This unwavering quest for compelling narratives continues to be the animating force behind every post. I am captivated by the opportunity to share stories that explore universal human experiences, all centered around the practices of making, describing, and sharing food. Whether it’s the meticulous craft of a chef, the vibrant traditions of a family recipe, or the economic impact of a food business, each story offers a window into our shared humanity. I particularly cherish the relationships cultivated with local and national businesses, both large and small. These collaborations are born from a shared passion to uncover and disseminate narratives that speak to the soul, convey genuine enthusiasm, and celebrate the pursuit of joy through food.
One such collaboration, a truly remarkable journey that exemplifies this ethos, is with Heray Spice. Our partnership has spanned several years, allowing me to witness firsthand their dedication to quality, community, and the profound stories embedded in every thread of their exquisite Afghan saffron.

Heray Spice: A Story of Resilience, Heritage, and Empowerment
Heray Spice is far more than just a spice company; it’s a testament to resilience, a celebration of heritage, and a powerful engine for community empowerment. The company was founded by Mohammad Salehi, a visionary entrepreneur whose roots are deeply embedded in the saffron farming traditions of Herat, Afghanistan. Growing up amidst the fragrant saffron fields, Mohammad harbored a profound connection to this precious spice and the land that nourished it.
Mohammad’s journey is one of remarkable courage and transition. He served with distinction as a local military linguist for the US Army & US Marines from 2010 to 2014, playing a vital role in bridging communication gaps. In 2014, he immigrated to Chicago, bringing with him not just his experiences but also a dream. Haunted by the vivid memories of the saffron fields he had left behind and driven by an unwavering desire to support and uplift Afghani farmers, Salehi embarked on a mission. He meticulously built Heray Spice, leveraging the abundant and high-quality saffron resources native to his home region. His vision was clear: to bring the finest Afghan saffron to the global market while simultaneously contributing to the economic recovery and prosperity of his community.

Ethical Sourcing and Uncompromising Quality: The Heray Spice Promise
Heray Spice stands as a beacon of ethical business practices, proudly operating as a fair-trade and Non-GMO Project Verified company. Their commitment extends beyond mere transactions; it’s a deep reverence for Afghanistan’s rich agricultural heritage and vibrant cultural tapestry. They offer products of unparalleled quality, meticulously ensuring that every spice is free from additives, artificial dyes, and harmful preservatives. This dedication to purity and authenticity is at the core of everything they do.
The mission of Heray Spice is profoundly impactful, articulating a vision “rooted in rebuilding Afghanistan’s agricultural economy.” After enduring decades of conflict and instability, the region desperately needed new avenues for growth and sustained recovery. By establishing a spice company centered on Afghanistan’s globally renowned saffron and other exquisite spices, Heray Spice achieves a dual objective: it not only introduces the finest saffron to an international market but, crucially, it empowers the local farmers of Afghanistan. This empowerment translates into sustainable livelihoods, improved living standards, and a renewed sense of hope for communities that have faced immense challenges. It’s a powerful cycle of quality products fueling positive social change.
Fascinating Facts About Afghan Saffron
- Saffron: Did you know?
- The Herat province is the undisputed heartland of Afghan saffron cultivation, contributing over 90% of the country’s total saffron output. This region’s unique climate and soil conditions are ideal for producing saffron of exceptional quality.
- Afghan saffron has consistently garnered global acclaim, most notably being recognized for the ninth time as the world’s highest quality saffron by the prestigious International Taste Institute in Belgium. This remarkable achievement is particularly significant given the fierce competition from major saffron-producing nations like Spain and Iran. Afghanistan’s saffron continually stands out, earning top honors year after year for its unparalleled color, aroma, and flavor profile.
- Saffron, often referred to as ‘red gold,’ is one of the world’s most expensive spices due to its labor-intensive harvesting process. Each delicate thread, or stigma, must be hand-picked from the Crocus sativus flower, a task that requires immense precision and dedication.
- Beyond its culinary applications, saffron has a long history of medicinal use in traditional practices across various cultures. It is prized for its potential antioxidant, anti-inflammatory, and mood-enhancing properties, making it a valuable addition to holistic wellness.

A Culinary Journey with Heray Spice: From Blog to Table
- History of my collaboration with Heray Spice
My journey with Heray Spice began in 2021, initiated through a thoughtful partnership with a local small business hub, Here Here Market. This initial introduction blossomed into a lasting connection, and I was thrilled to feature Heray Spice prominently in my 2021 holiday gift guide, highlighting their exceptional quality and inspiring mission to my readers.

Below, you’ll see my mother’s cherished spice cake, a treasured heirloom family recipe that I lovingly reimagined in 2021 using Heray Spice’s premium saffron.

The addition of a few delicate saffron strands to my mother’s original recipe transformed the cake into something truly extraordinary. It became a moist and aromatic dessert, brimming with vibrant, life-affirming flavors that spoke to my soul in ways that transcended space and time, whisking me back to the joyous days of my childhood. The cake took on a new life, an unexpected depth of character that I never thought possible. Served with homemade peach jam and beautifully baked apples, this dessert plate was nothing short of spectacular, a harmonious blend of nostalgia and culinary innovation.

Fast forward to 2024, my collaboration with Heray Spice continued to flourish. I was delighted to receive another shipment of their exquisite saffron, alongside a selection of their newly launched spices, including aromatic cumin and intriguing Omani black lime. These new additions offered exciting culinary possibilities.

I proudly showcased these exceptional products in my May product roundup post. The Heray Spice saffron, in particular, became the star ingredient in two delightful recipes: a creamy rice pudding generously enriched with plump dried cherries and crunchy chopped pistachios, offering a symphony of textures and subtle sweetness.

…and a delicate sharbati saffron cake, which I prepared meticulously following the expertly crafted recipe available on the Heray Spice website. Each dish beautifully demonstrated the versatility and transformative power of premium Afghan saffron, turning simple ingredients into extraordinary culinary experiences.

After three years of enriching online communication and collaboration, the opportunity finally arose to meet Mohammad Salehi in person. This much-anticipated encounter took place at the 2024 edition of The National Restaurant Association Show – an event I extensively reviewed here.

The experience was incredibly heartwarming, akin to reconnecting with long-lost friends. The genuine warmth and shared passion instantly bridged the gap of our virtual acquaintance, solidifying a professional relationship into a truly personal connection.

Heray Spice’s Impact: A Look at the 2024 Report
- Heray Spice 2024 report
Every year, Heray Spice meticulously publishes a comprehensive report detailing their strides in sustainability, product innovation, and unwavering commitment to quality assurance. Their latest report for 2024 offers truly fascinating insights into their remarkable progress and the significant impact they are making:
- They successfully welcomed an impressive 121 new farmers into their cooperative, expanding their network to a robust total of 176 farmers. This expansion directly translates into increased opportunities and improved livelihoods for more families in the region.
- These 176 dedicated farmers achieved a record-breaking harvest of approximately 680 pounds of premium saffron. This represents an astounding increase of almost 60% compared to the previous year’s harvest, a testament to improved farming practices and cooperative growth.
- To put this remarkable achievement into perspective, considering that there are roughly 65,000 delicate saffron flowers needed to produce just one pound of saffron threads, their total harvest for the year involved the careful processing of approximately 45,000,000 individual flowers. This staggering number underscores the immense labor and dedication required to bring this precious spice to market.
- Heray Spice also provided seasonal employment for more than 120 individuals, who worked in two shifts to meticulously process and package the saffron during the crucial harvest months of November and December. Notably, and of profound social significance, the Taliban granted permission for women to return to work in saffron facilities after a three-year absence, a critical step towards economic empowerment for women in the region.
- Demonstrating significant growth and future-forward planning, the company moved into a new facility that is triple the size of their previous one. This expanded infrastructure can comfortably accommodate up to 65 employees working simultaneously, greatly increasing their operational capacity.
- Financially, Heray Spice reported total sales of $478,250. Crucially, a substantial portion—$368,600—was reinvested directly back into the Afghan farming community. This includes payments to farmers for their saffron threads, wages for seasonal employment, and expenditures on essential supplies and services. This figure represents an impressive 47% increase from the previous year, highlighting the company’s strong commitment to fair trade and local economic development.

Unwavering Commitment to Excellence and Global Recognition
- High standards and accomplishments
One of the many exemplary qualities that deeply impresses me about Mohammad Salehi and the dedicated Heray Spice team is their unwavering commitment to authenticity and excellence. In a world brimming with diverse opportunities, Salehi chose to pursue what he knew best – the cultivation and distribution of exceptional spices. He continues to follow his dream with remarkable determination and unshakeable integrity, ensuring that every product offered by Heray Spice meets the highest standards of freshness and quality.
For saffron, the ultimate benchmark of quality is its coloring strength, intricately linked with its distinctive taste and aroma. According to the stringent ISO 3632.2 standard, saffron’s coloring power, measured by its Crocin content, must register above at least 200 points to qualify for Category #1, the highest grade. Heray Spice’s latest harvest saffron boasts an astonishing Crocin score of 318.7 points. This incredible figure is 118.7 points above the minimum requirement for ISO Category #1, setting a new industry benchmark. As Mohammad Salehi proudly articulated in a recent newsletter, “This is a record probably no one hit this quality in the US. In other words, our hard work and quality control pays off every year by having the record of highest quality Crocin (color), PicroCrocin (smell) & Safranal (taste). We challenge any competitor or saffron company to bring more potent, aromatic, and dark-red pure saffron than 313.8!” This bold statement underscores their confidence in their unparalleled quality.
Further testament to Mohammad Salehi’s leadership and Heray Spice’s commitment to natural, ethical practices, Mohammad Salehi was recently appointed to the distinguished Board of Directors for the Non-GMO Project. This is an amazing recognition, validating his profound understanding of and adherence to high standards in both theory and practice. His appointment reflects a superb philosophical foundation and a mission-driven approach that resonates deeply within the industry.

Saffron-Infused Memories: Reimagining Childhood Delights
My culinary explorations with Heray Spice saffron recently led me to another cherished family tradition: reimagining the cookies of my childhood. This beloved recipe, a staple from my younger years, was first shared on this blog back in 2014. It’s a recipe imbued with nostalgia and warm memories, perfectly suited for a delicate saffron transformation.

As I fondly recounted in my original post, my mom frequently baked these cookies throughout my upbringing. Their simplicity and economical nature made them a regular fixture in our home. I have vivid recollections of her bustling around the oven, effortlessly pulling out tray after tray of fresh-smelling cookies and swiftly replacing them with new batches. Her energy was boundless, her enthusiasm infectious. She knew how much my dad and I adored these moist, melt-in-your-mouth treats, and she tirelessly ensured our cookie jars remained perpetually replenished. Helping my mom bake these cookies was always a highlight of my childhood; they were immense fun to make and even more delightful to eat, a true labor of love that tasted of home.

Adorned with the subtle magic of saffron, these reimagined cookies glowed with alluring shades of gold and amber, catching the beautiful afternoon light. Their transformation was complete: they were not just melt-in-your-mouth delicious but also exquisitely aromatic, carrying the signature floral and subtly sweet notes of premium Afghan saffron. These tempting treats, sandwiched together with a vibrant combination of homemade mango and blueberry jams, proved to be the perfect accompaniment to my comforting cup of foamy hot latte. There’s truly nothing better to soothe the soul and calm the mind on a chilly winter afternoon than a bite of these nostalgic yet elevated delights.
