Quinoa and Dandelion Salad

Ingredients

  • 3 cups cooked quinoa (cooked according to package instructions)
  • 1 cup dandelion, finely chopped
  • 1/3 cup extra virgin olive oil
  • 1 tbsp + 1 1/4 tsp freshly squeezed lemon juice
  • 1 tsp wildflower honey
  • 1/2 cup diced cucumber
  • 1/2 cup tomatoes, cut into small cubes
  • 1/2 cup grated carrot
  • 1/2 cup marinated olives, sliced
  • 1/2 cup marinated roasted red peppers, cut into medium-size pieces
  • 2 tbsp finely chopped chives
  • Handful mustard blossoms for decoration (optional)
  • Salt and pepper to taste

Instructions

  1. In a small Pyrex cup or bowl, prepare the vinaigrette by whisking together the extra virgin olive oil, fresh lemon juice, wildflower honey, and salt and pepper to taste. Mix until well combined.
  2. Combine the cooked quinoa, finely chopped dandelion, and all of the prepared vegetables (diced cucumber, cubed tomatoes, grated carrot, sliced marinated olives, and cut roasted red peppers) in a large mixing bowl. Pour the freshly made vinaigrette over the salad mixture and toss gently until all ingredients are thoroughly coated. Taste and adjust seasoning with additional salt and/or pepper, if necessary. Garnish with finely chopped chives and, if desired, a handful of vibrant mustard blossoms for an aesthetic touch. Chill the salad in the refrigerator until ready to serve.
  3. Serve the Quinoa and Dandelion Salad at room temperature as a refreshing appetizer, or enjoy it mildly warm as a fulfilling main meal, perhaps alongside some fresh, crusty bread. Enjoy the unique flavors and abundant health benefits!
