  • ¼ cup chopped onion
  • 3 chopped garlic cloves
  • Juice of 2 limes (or ¼ cup lime juice)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • 2 teaspoons smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt
  • 2 ½ pounds boneless skinless chicken breasts, cut into 1 ½ inch strips
  • For the Salsa:
  • 1 avocado, chopped and tossed with juice of ½ of a lime
  • ⅓ cup chopped onion
  • 1 cup chopped cucumber
  • 2 cups chopped tomato
  • Juice of ½ of a lime
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons chopped fresh cilantro
  • Kosher salt and pepper to taste
  • For Serving:
  • Cotija cheese, for sprinkling
  • Tortillas
  • Tortilla chips

Instructions

  1. In a large resealable plastic bag, combine the first 10 marinade ingredients (chopped onion through kosher salt). Place the chicken strips in the bag. Seal the bag, pressing out excess air, and squish the contents around to mix well and ensure the chicken is fully coated.
  2. Let the chicken marinate for about 30 minutes at room temperature, or up to 2 hours in the refrigerator. Occasionally squish the bag to redistribute the marinade.
  3. Heat a grill to medium-high heat.
  4. While the grill is heating, prepare the salsa. In a medium-sized bowl, combine the chopped avocado (tossed with lime juice), chopped onion, chopped cucumber, chopped tomato, juice of ½ of a lime, 1 tablespoon extra virgin olive oil, and chopped fresh cilantro. Season to taste with kosher salt and pepper. Set aside.
  5. Remove the chicken from the marinade, discarding any remaining marinade in the bag.
