Ingredients

  • 2 1/2 cups cooked orzo pasta
  • 1 medium red bell pepper, cut into small cubes
  • 1 1/2 cups finely shredded dandelion greens
  • 1/3 cup extra virgin olive oil
  • 1 tbsp + 1 1/4 tsp white wine vinegar
  • 1 tbsp fresh finely chopped oregano (optional)
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a small Pyrex cup or bowl, make the vinaigrette by mixing oil, vinegar, and salt and pepper to taste. Add oregano and/or red pepper flakes, if desired.
