Ingredients
- 8 oz. plain goat cheese
- 8 oz. cream cheese softened
- ¼ cup chopped pecans
- ¼ cup chopped dried cranberries
- ¼ cup minced mint leaves or parsley or basil
Instructions
- In a medium bowl, mix the goat cheese and cream cheese until smooth and creamy. Cover and chill for 30 minutes.
- In a small bowl, combine the chopped pecans, dried cranberries and minced mint.
- Scoop about 1 tablespoon of the chilled cheese mixture and shape it into a ball. Drop the ball into the nut-and-cranberry mixture and gently roll until fully coated. Repeat with remaining mixture.
- Place finished truffles on wax or parchment paper and chill in the refrigerator at least 2 hours before serving.
