  • ⅛ teaspoon red pepper flakes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ medium onion, chopped (about 1 cup)
  • 2 garlic cloves, finely chopped
  • 2 cups mushrooms, sliced
  • 1 small carrot, finely chopped (about ½ cup)
  • 1 small celery stalk, finely chopped (about ½ cup)
  • 4 ounces pancetta, finely chopped
  • 1 pound ground beef (85/15 blend recommended)
  • Salt and pepper to taste
  • ¼ cup red wine
  • 1 (28 ounce) can diced tomatoes in juice
  • ¼ cup half and half or light cream
  • 1 tablespoon butter
  • Pasta, polenta, or zucchini noodles for serving

Instructions

  1. Heat a large sauté pan over medium heat and add the olive oil. Once the oil begins to shimmer, add the red pepper flakes, dried basil, and dried oregano. Sauté for 20-30 seconds until fragrant. Add the finely chopped onion, garlic, mushrooms, carrot, celery, and pancetta. Season with ½ teaspoon of salt and ¼ teaspoon of pepper. Sauté for 10 to 12 minutes, stirring occasionally, until the vegetables are softened and lightly caramelized, and the pancetta is almost crisp.
  2. Add the ground beef to the pan, breaking it up with a spoon. Continue cooking over medium heat until the meat is thoroughly browned, which should take about 8 to 10 minutes. Once browned, carefully drain off any excess fat from the pan.
  3. Return the pan to the burner over medium heat. Pour in the red wine and use a wooden spoon to scrape up any browned bits that have accumulated on the bottom of the pan – these bits are packed with flavor. Cook until the wine has almost entirely evaporated, approximately 2 minutes.
  4. Stir in the can of diced tomatoes along with their juices, the half and half (or light cream), and a fresh pinch of red pepper flakes, basil, and oregano. Mix well to combine all ingredients. Reduce the heat to low, cover the pan partially, and allow the sauce to simmer gently for about 30 minutes, giving the flavors time to meld and deepen.
  5. Once simmered, remove from heat and stir in the butter until melted and fully incorporated. Taste the sauce and adjust seasonings with additional salt and pepper as needed.
