Ingredients

  • 8 oz. plain goat cheese
  • 8 oz. cream cheese softened
  • ¼ cup chopped pecans
  • ¼ cup chopped dried cranberries
  • ¼ cup minced mint leaves or parsley or basil

Instructions

  1. In a medium bowl, mix the goat cheese and cream cheese until smooth and creamy. Cover and chill for 30 minutes.
  2. In a small bowl, combine the chopped pecans, dried cranberries and minced mint.
  3. Scoop about 1 tablespoon of the chilled cheese mixture and shape it into a ball. Drop the ball into the nut-and-cranberry mixture and gently roll until fully coated. Repeat with remaining mixture.
  4. Place finished truffles on wax or parchment paper and chill in the refrigerator at least 2 hours before serving.
