While many people meticulously list their New Year’s resolutions, I’ve always found myself gravitating towards a simpler philosophy: “Be a better person.” This annual motto, while broad, has always guided my intentions. However, the start of a recent year brought a profound shift in my perspective, particularly as I navigated life beyond fifty. I began to realize how much of my existence had been spent in a constant state of urgency, perpetually rushing from one task to the next.

This realization, an “aha” moment of sorts, arrived unexpectedly in the form of a text message from one of my personal chef clients. She informed me that her family would be taking a hiatus from my services. In years past, such news would have immediately triggered a flurry of calculations about lost income and an anxious mental checklist of reasons why a client might no longer require my culinary expertise. This time, however, my reaction was strikingly different. Instead of anxiety, I felt an overwhelming sense of calm, even relief. My schedule, both personal and professional, had been relentlessly packed, and this unexpected break, whether self-imposed or externally prompted, was precisely what I needed to step back and breathe.

The text served as a catalyst, illuminating how the past half-century of my life had been largely characterized by a relentless pursuit of getting things “done.” From a young age, my best friend and I would create elaborate culinary concoctions and inevitable messes in our parents’ kitchens, then frantically race against the clock to clean up before they returned home. In high school, my academic goal was often a solid ‘B,’ driven by a desire to complete assignments quickly rather than striving for perfection. While my report cards certainly featured a fair share of ‘A’s, the underlying motivation was always speed.

As I matured and began raising a family with my husband, this pattern of rushing persisted. My days were a blur of errands, hurried meal preparations before picking up the kids from their softball or football practices. I even found myself inadvertently instilling this hurried mindset in my children, urging them to quickly clean their rooms, get ready for school, or finish their homework. At the time, I didn’t fully grasp the extent to which I was living in a constant state of rush, mistaking busyness for productivity.

Now, with my children grown and our home a quiet “empty nest,” much of my daily life revolves around my personal chef business. Cooking has always been a source of immense joy and has been a central part of my identity for as long as I can recall. The opportunity to cook for families beyond my own is truly my ideal profession; it brings a profound sense of calm and fulfills an intrinsic need that words can barely articulate. Yet, even in this cherished career, the habit of rushing had subtly taken root.

That client text, however, forced a much-needed introspection. I recognized that my continuous haste was preventing me from being my best self in many areas of my life. I would rush through my days, always attempting to squeeze in one more task or activity. Grocery shopping for clients became a speed race through the aisles. I would rush home to ensure my dogs enjoyed ample playtime at the park, but not before quickly tossing a load of laundry into the machine to maximize my time out. Even simple tasks like paying bills online were intertwined with emailing menu suggestions to a client, all in a frantic effort to multitask.

It might sound cliché, but I truly believe this was the pivotal moment I had subconsciously anticipated my entire life. I had always imagined such a moment would arrive with dramatic flair, much like in the movies, believing there was something more significant awaiting me. Who would have thought that this profound shift in perspective would emanate from a mere four-sentence text message?

This realization has empowered me to embrace a more mindful and conscious approach to every aspect of my life. Whether I’m taking my dogs for a leisurely walk, engaging in a phone conversation with a friend, meticulously preparing for a personal chef service, baking a batch of cookies, or even drafting a blog post, my intention is to be fully present and engaged. I acknowledge that many of my days will remain busy, but I am committed to preventing them from becoming chaotic and rushed. I’m not entirely sure what I was always rushing for, perhaps it was merely an ingrained habit, an unspoken expectation I felt compelled to meet.

To inaugurate this newfound mindful and conscious attitude, I naturally turned to leisurely recipe development. On January 1st, I dedicated time to crafting a recipe specifically designed to counteract the excessive culinary indulgences of the preceding holiday season. The result is this delightful Winter Slaw with Chicken, Pomegranate, and Toasted Pine Nuts, which now happily resides in my refrigerator, serving as a wholesome snack, a satisfying lunch, or a light yet flavorful dinner. My hope is that it will serve as a delicious anchor, helping me stay on track with my healthy eating goals.

This particular recipe truly hits all the right notes for me, harmonizing sweet and savory flavors in a wonderfully satisfying way. It features tender, shredded cooked chicken, offering a lean protein boost. The delightful crunch comes from perfectly toasted pine nuts and crisp shredded cabbage and carrots. Assertive red onion adds a subtle bite, while the jewel-like sweetness of pomegranate arils bursts with flavor. All these vibrant ingredients are gently tossed in a bright and zesty vinaigrette, artfully crafted with apple cider vinegar, Dijon mustard, and heart-healthy avocado oil. Each spoonful is a symphony of textures and tastes, making this slaw not just a meal, but an experience.

For optimal freshness and texture, this slaw holds up beautifully in the refrigerator for up to three days. The secret to its longevity lies in using freshly shredded green cabbage rather than the pre-shredded bags often found in grocery stores. Freshly shredded cabbage retains its crispness much longer, preventing the slaw from becoming watery or limp.

However, if convenience is key and you opt for the pre-shredded bag of cabbage and carrots, I recommend a simple strategy to maintain the integrity of your slaw. Combine the cooked chicken, toasted pine nuts, diced red onion, and pomegranate arils in a separate container. Keep this mixture distinct from the shredded cabbage and carrots, and store the vinaigrette in its own sealed jar. When hunger calls, simply toss a couple of cups of the cabbage and carrot mixture with a generous portion of the chicken and other ingredients, then drizzle with the vinaigrette. A quick season with salt and pepper to taste, and your perfectly fresh, vibrant meal is ready to be savored.

Ingredients

  • 7 cups shredded cabbage and carrots
  • 2 cups cooked chicken shredded
  • ½ cup pine nuts toasted
  • ½ cup pomegranate seeds
  • ½ cup red onion diced
  • 2 teaspoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  • ¼ cup apple cider vinegar
  • ½ cup avocado oil

Instructions

  • In a large bowl, gently combine the shredded cabbage and carrots, shredded cooked chicken, toasted pine nuts, pomegranate seeds, and diced red onion. Set this mixture aside.
  • In a separate small bowl, add the Dijon mustard, honey, kosher salt, ground pepper, apple cider vinegar, and avocado oil. Whisk these ingredients together vigorously until they are thoroughly combined and the vinaigrette has emulsified into a smooth, creamy consistency.
  • Pour approximately ½ cup of the prepared vinaigrette over the slaw ingredients in the large bowl. Toss everything gently but thoroughly to ensure all ingredients are evenly coated. Taste and adjust seasoning with additional salt and pepper as desired. Serve immediately or store as recommended.

Notes

For the shredded cabbage and carrots, you can use a 14-ounce bag of pre-shredded mix for convenience, or finely shred 6 cups of green cabbage and 1 cup of carrots from scratch for superior crispness.

If avocado oil is not available, extra virgin olive oil makes an excellent substitute for the vinaigrette.

This recipe for the vinaigrette yields a little more than you’ll need for this winter slaw. Don’t let the extra go to waste! It’s fantastic drizzled over mixed greens, especially when tossed with thinly sliced apples, diced avocado, and a sprinkle of crumbled feta cheese for another light and flavorful salad.
