My family’s love for grilling has always been strong, and burgers are a constant favorite on our outdoor menu. However, we truly elevated our burger game when we brought our flat griddle out to the grill. This simple addition transformed our ordinary cookouts into a smash burger paradise, proving that exceptional flavor doesn’t require complex techniques or fancy equipment. The beauty of the smash burger lies in its simplicity and the incredible textures it delivers.

This smash burger recipe isn’t just about delicious taste; it’s also incredibly fun to make. The process is quick, engaging, and yields results that are consistently satisfying. The distinct characteristics of a smash burger set it apart from your everyday hamburger patty. They are characterized by their super thin profile, where sliced onions are literally pressed into the meat, creating an aromatic crust. Cooked on a scorching hot griddle, these burgers develop irresistible charred and crispy edges, locking in maximum flavor and juiciness.

The Science of the Smash: Why This Burger Reigns Supreme

What makes a smash burger so incredibly good? It’s all about the Maillard reaction. By pressing a loose ball of ground beef onto a screaming hot griddle, you maximize surface contact between the meat and the heat. This rapid searing creates a beautifully browned, intensely flavorful crust – those coveted crispy edges that define a true smash burger. Unlike thicker patties that cook more slowly and retain moisture by design, smash burgers prioritize that crust, creating a textural contrast that is simply irresistible. The thinness of the patty also means it cooks incredibly fast, making it a perfect option for a quick weeknight dinner or feeding a crowd.

The addition of thinly sliced onions, smashed directly into the patty, is another game-changer. As the burger cooks, the onions caramelize and meld with the beef, imparting a subtle sweetness and an extra layer of savory depth. This isn’t just a topping; it’s an integral part of the burger’s flavor profile, making each bite an aromatic delight. This technique ensures that the onions are cooked perfectly, becoming soft and sweet without overpowering the rich beefy taste.

Essential Equipment for Smash Burger Success

While the process is straightforward, having the right tools can make all the difference in achieving smash burger perfection. The most critical piece of equipment is a flat griddle. Whether it’s a cast iron griddle pan for your stovetop, a dedicated electric griddle, or a heavy-duty steel griddle plate for your outdoor grill, the key is a large, flat, heat-retaining surface. Cast iron is often preferred for its exceptional heat retention and even heat distribution, which are crucial for developing that ideal crispy crust.

Beyond the griddle, a sturdy, flat spatula is indispensable. A thin, flexible metal spatula with a wide blade works best for both smashing the patties and scraping them off the griddle. Some even prefer a dedicated burger smasher tool for consistent results. You’ll also want a good set of tongs for handling ingredients and buns, and a lid for melting cheese effectively. Don’t forget a cooling rack to rest your cooked burgers, allowing any excess grease to drip away while keeping the crust crisp.

Ingredients & Smart Substitutions

Crafting the perfect smash burger starts with high-quality ingredients. Here’s what you’ll need, along with some suggested substitutions to customize your experience:

  • Ground Beef: An 85/15 blend is highly recommended. This ratio signifies 85% lean meat to 15% fat. The fat is crucial for flavor and juiciness, especially since smash burgers cook quickly and the fat won’t render away as much as it would in a thicker patty on a grill grate. Avoid leaner blends, as they can result in dry burgers.
  • Kosher Salt: Essential for seasoning. Its larger crystals adhere well to the meat and contribute to that fantastic crust.
  • Freshly Ground Black Pepper: Adds a subtle peppery kick that complements the rich beef flavor.
  • Onions: Thinly sliced yellow, Vidalia, or red onions are all delicious choices. Yellow onions offer a classic savory flavor, Vidalias provide a sweeter note, and red onions add a slight tang and beautiful color. Slicing them thinly ensures they cook down and integrate seamlessly into the burger.
  • Cheese: American cheese is the quintessential choice for smash burgers due to its unparalleled melting properties, creating that perfect gooey layer. However, feel free to experiment with other varieties like sharp cheddar for a more robust flavor, pepper jack for a spicy kick, or Swiss for a nutty profile.
  • Hamburger Buns: A soft, sturdy bun that can hold up to two patties and all the toppings is ideal. Brioche buns offer a rich, slightly sweet flavor, while classic sesame seed buns provide a comforting, familiar touch. Always toast your buns for added texture and to prevent them from getting soggy.
  • Ketchup: A classic and essential condiment for most burger enthusiasts.
  • Mustard: Yellow mustard or Dijon can add a tangy counterpoint to the rich beef and cheese.
  • Mayonnaise: Provides a creamy, rich base. Consider mixing it with a bit of ketchup and relish for a simple “special sauce.”
  • Sliced Tomatoes: Fresh, ripe tomatoes add a burst of acidity and freshness.
  • Lettuce: Crisp iceberg or romaine lettuce provides a refreshing crunch.
  • Dill Pickle Chips: The briny crunch of dill pickles cuts through the richness, offering a perfect balance.

How to Make Smash Burgers: Step-by-Step Perfection

Whether you’re grilling outdoors or cooking on your stovetop, the fundamentals of smash burger success remain the same: high heat and quick cooking. We’ll cover both methods, ensuring you can make incredible smash burgers anytime, anywhere.

Outdoor Grilling Method: For That Authentic Smoky Char

Achieving that coveted smoky char is best done outdoors. My preferred method involves placing a large flat griddle directly on my charcoal Weber grill. Grilling these thin burgers outdoors also significantly helps in managing the mess, eliminating a greasy stovetop cleanup.

Preparation:

  1. In a large bowl, gently combine the ground beef with kosher salt and freshly ground pepper. Avoid overworking the meat, as this can make the burgers tough.
  2. Form the seasoned ground beef mixture into 10 loose balls, each approximately 2 ounces. Don’t compress them too much; the loose structure is important for the smash.

Cooking on the Grill:

  1. Heat the Grill: Preheat your grill to high heat. Once the grill is hot, place your griddle on top of the grill grate and allow it to heat up for at least 5-10 minutes until it’s scorching hot. You should see a wisp of smoke or a shimmering surface.
  2. The Smash: Carefully place 5 beef balls onto the hot griddle, leaving some space between them. Immediately top each beef ball with a small pile of thinly sliced onions. Using a sturdy large spatula (or a burger smasher), press each ball down firmly and evenly into a thin patty, incorporating the onions into the meat. The goal is to create maximum contact with the griddle.
  3. First Cook: Cook for about 2 minutes. You’ll see the edges crisping and browning beautifully.

  1. Flip & Cheese: Using your spatula, carefully scrape underneath each burger to loosen it from the griddle (don’t leave any delicious crispy bits behind!). Flip the burgers and immediately top each one with a slice of cheese.
  2. Melt the Cheese: Quickly place the lid on the grill to trap the heat. Cook for another 1 to 2 minutes, or until the cheese is perfectly melted and gooey. The residual heat will finish cooking the thin patties.

  1. Serve: Remove the finished burgers from the griddle. For the best experience, serve two burgers on each toasted bun, layered with your favorite condiments and fresh toppings.

How to Cook Smash Burgers on the Stovetop: Indoor Griddle Burgers

Don’t have an outdoor grill or prefer to cook indoors? No problem! You can absolutely achieve fantastic smash burgers right on your stovetop. A flat griddle pan or a heavy cast iron skillet are your best options for cooking these burgers inside.

Tips for Indoor Cooking:

  • Ventilation is Key: Smash burgers generate a fair amount of smoke and grease splatter. Make sure your kitchen has a strong exhaust fan running, and consider opening a window for additional ventilation.
  • Minimize Mess: To keep grease splatters to a minimum and simplify cleanup, lay sheets of aluminum foil on the sides of your griddle or pan. These makeshift “walls” will catch the majority of the splatters.
  • High Heat: Just like outdoor grilling, ensure your pan or griddle is scorching hot before adding the beef. This is essential for developing that crispy crust.

Once your equipment is ready and heated, the cooking method is identical to that described for outdoor grilling. Simply follow the preparation and cooking directions above, keeping an eye on ventilation and cleanup as you go. You’ll still get those delicious, crispy-edged patties with perfectly melted cheese.

Expert Tips for Smash Burger Mastery

To truly perfect your smash burger technique and consistently achieve restaurant-quality results, keep these expert tips in mind:

  • Choose the Right Beef: Always use 85/15 ground beef. This specific ratio of meat to fat (85% lean, 15% fat) is crucial. Because you’re cooking on a griddle, the fat doesn’t drip through grates as it would on a traditional grill. This retained fat is what gives your burgers incredible flavor and keeps them juicy, even when thin and crispy.
  • Preheat Your Griddle Properly: Ensure your griddle is good and hot—scorching hot, in fact—before adding the burger balls. High heat is the secret to achieving those desired crispy, caramelized edges on the burgers through the Maillard reaction. Don’t rush this step!
  • Smash Firmly, But Once: Give the burgers a good, firm smash! You want to press the onions firmly into the beef and create a very flat patty. However, only smash once. Resmashing or moving the burger around will release juices and prevent the formation of that beautiful crust.
  • Optimal Cheese Melt: As soon as you flip the burgers, immediately top them with your chosen cheese. If cooking on a grill with a lid, close it. If on a stovetop, you can place a heat-safe dome or another lid over the burgers briefly. This traps steam and heat, melting the cheese to an ooey-gooey, irresistible perfection in just a minute or two.
  • Don’t Forget the Buns: Spend a couple of minutes toasting your hamburger buns on the grill or griddle. The lightly crispy crunch of a toasted bun provides a wonderful contrast to the soft, juicy burger and prevents it from becoming soggy.
  • Avoid Overcrowding: Cook burgers in batches if necessary. Overcrowding the griddle will lower its temperature, steaming the burgers instead of searing them, and preventing that crispy crust from forming. Give each patty space to breathe and brown properly.

What to Serve with Smash Burgers

A perfect smash burger deserves perfect side dishes. Here are some fantastic pairings to complete your meal:

  • Fennel, Apple and Radish Slaw: A refreshing and crisp slaw that offers a bright contrast to the richness of the burger.
  • The BEST Baked Crispy Oven Fries: You can’t go wrong with classic fries. These oven-baked ones are healthier and just as satisfying.
  • Spinach and Blueberry Salad with Yogurt Dressing: A light and fruity salad for those looking for a fresh, vibrant side.
  • Chickpea Salad with Fresh Herb Vinaigrette: A protein-packed and flavorful salad that adds a unique twist to your burger meal.
  • Roasted Carrot and Parsnip Fries: A slightly sweeter, healthier alternative to traditional potato fries.
  • Classic Onion Rings: Crispy, fried onion rings are a nostalgic and delicious accompaniment.
  • Sweet Potato Fries: A popular, subtly sweet alternative to regular fries.
  • Milkshakes: A creamy, cold milkshake is the ultimate indulgent pairing for any burger.

Frequently Asked Questions About Smash Burgers

What kind of ground beef is best for smash burgers?

For the juiciest and most flavorful smash burgers, an 85/15 ground beef blend (85% lean, 15% fat) is highly recommended. The fat content is crucial for achieving a moist interior and a beautifully crispy exterior when cooked on a hot griddle. Leaner beef tends to dry out quickly.

Can I make smash burgers without a griddle?

While a flat griddle (either stovetop or outdoor) is ideal for maximizing surface contact and crust development, you can still make excellent smash burgers using a heavy-bottomed cast iron skillet. The key is to ensure the cooking surface is scorching hot and that you have a sturdy spatula for effective smashing.

How do I prevent my smash burgers from being dry?

To prevent dry smash burgers, use an 85/15 ground beef blend, avoid overworking the meat when forming the balls, and cook them quickly on a very hot surface. The rapid cooking time and the fat content help lock in moisture. Also, remember to only smash the burger once to prevent excess moisture loss.

What’s the best way to smash a burger?

Place a loose ball of ground beef on a hot griddle, then immediately place a piece of parchment paper over it (optional, but helps with sticking). Using a sturdy, flat metal spatula or a dedicated burger smasher, press down firmly and evenly for about 10 seconds to create a thin, flat patty. Remove the spatula and parchment paper, and cook without disturbing until ready to flip.

Notes

  • Use 85/15 ground beef. This fraction is a ratio of meat to fat in the ground beef. Since the grilling is done on a griddle, the fat does not drip through the grate. The fat is what gives the burgers fabulous flavor.
  • Make sure the griddle is good and hot before adding the burger balls. A scorching hot griddle will help achieve the crispy edges on the burgers.
  • Give the burgers a good smash! You want the onions pressed into the burgers and a flat burger.
  • As soon as you flip the burgers, top with the cheese. That way the cheese will melt to an ooey gooey goodness.
  • Spend a couple minutes toasting the buns on the grill. The crispy crunch is a nice contrast to the burgers.
