Ingredients
- 1 (12oz) Sitka Salmon Shares Wild Alaskan Coho Salmon fillet
- 1 tsp harissa powder
- 2 cups kale, roughly chopped
- 1 cup grated purple cabbage
- 1 cup grated carrots
- 1/2 cup cubed red bell pepper
- 2 cups cauliflower florets, cut into medium-size pieces
- 3 tbsp pomegranate molasses
- 1/2 cup crumbled gorgonzola cheese
- 1/3 cup extra virgin olive oil
- 1 tbsp + 1 1/4 tsp white wine vinegar
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine cauliflower florets and pomegranate molasses. Mix thoroughly to ensure even coating. Spread the coated cauliflower on a baking pan lined with parchment paper. Place the salmon fillet on a separate baking pan also lined with parchment paper. Rub the harissa powder evenly over the salmon. Place both pans in the preheated oven and roast for 20 minutes. Once cooked, remove from the oven and allow to cool slightly.
- In a large mixing bowl, combine the kale, carrots, purple cabbage, and red bell pepper. Tear the slightly cooled salmon into chunks and add it to the bowl along with the roasted cauliflower and crumbled gorgonzola. Drizzle with olive oil and white wine vinegar. Season generously with salt and pepper to taste. Mix all ingredients well until everything is evenly combined. Adjust oil or vinegar if desired for your preferred dressing consistency. Serve slightly chilled.
