This remarkable turnout represented a robust 6% increase in total attendance compared to the previous year, highlighted by an outstanding 22% growth in international participation. Such figures demonstrate the Show’s expanding influence and its role as a crucial international platform for industry stakeholders. Countries with the highest representation included culinary powerhouses and emerging markets alike: Brazil, Canada, China, Mexico, Taiwan, Colombia, the United Kingdom, Italy, Turkey, Japan, and Spain. Furthermore, there was notably strong participation from nations such as China, the United Kingdom, Honduras, and Cameroon, signaling a diverse and growing interest in global culinary exchange and innovation.

This vast expanse featured over 900 distinct product categories, ranging from cutting-edge kitchen equipment to gourmet ingredients, all designed to inspire and equip restaurant operators for success. The sheer scale offered an immersive experience, allowing visitors to explore every facet of the industry under one roof.

- Exhibitors: The Show hosted a staggering 2,400+ exhibitors, presenting an incredible diversity of products and services. This included over 700 new exhibitors, representing 34% of the total, which brought fresh perspectives and groundbreaking solutions to the forefront. Alongside these newcomers, more than 1,500 returning exhibitors reinforced their commitment to the industry, showcasing their latest advancements and reaffirming their market leadership. One of my primary motivations for attending this year’s Show was to gain deeper insights into effective strategies for counteracting the significant difficulties currently faced by the restaurant industry. This challenging environment, marked by rising costs and shifting consumer behaviors, has been widely noted in various publications (here, here, here, here and here). During the press breakfast on the first morning, presenters underscored the critical importance of striking a delicate balance between providing a memorable culinary experience and offering seamless convenience. They emphasized the need for truly frictionless integration of technology, citing examples like stress-free ordering systems and beverage-forward drive-thrus, all strategically positioned to “excite and delight the guests.” Panelists further highlighted the “democratization of technology” as a powerful force leading to improved inventory management, optimized staff scheduling, and a more comprehensive understanding of menu performance. These advancements are not only enhancing operational efficiency but are also instrumental in alleviating food waste, contributing to both profitability and sustainability.
Menu innovation continues to be recognized as the paramount key to resilience and sustained success in the competitive restaurant landscape. In this regard, several strategies were highlighted: the strategic deployment of limited-time offers (LTOs) capitalizing on trending flavors, the enduring appeal of sweet and spicy combinations, and the growing demand for innovative cold beverages. Furthermore, the importance of customization and individualization in menu offerings was strongly emphasized, catering to diverse dietary needs and personal preferences. As underscored at the press conference, the ability to quickly monetize fast-moving culinary trends, such as those popularized by social media phenomena like The TikTok Kitchen, can unlock a world of profitable possibilities for agile restaurant operators, allowing them to capture new market segments and enhance brand relevance.

Heray Spice stood out as one of my most significant highlights of the Show. Another immensely rewarding personal highlight was the opportunity to serve as a judge at the prestigious Bellavita Expo once again. This experience is always a deep dive into the world of authentic Italian gastronomy, allowing me to engage with innovative products and passionate producers.

I dedicated approximately three hours to meticulously evaluating twelve distinct foods and beverages. My assessment criteria included not only taste and quality but also packaging design, the captivating story behind each product, its suitability and appeal for the market, and its overall innovation factor. The depth of learning during this process was immense, offering a unique perspective on the intricate details that contribute to a product’s success. Among my absolute favorites were:
The truly delicious, freshly made pizza crafted on-the-spot by the talented Molino Scoppettuolo team. Their dedication to authentic Italian flour and traditional techniques was evident in every bite, delivering a truly memorable culinary moment…

… De Nigris specialty vinegars and an exquisite range of vinegar-based products. Their balsamic vinegars, in particular, showcased remarkable complexity and versatility, highlighting generations of expertise in Modena’s renowned tradition…

… and Toschi fruit products. From their luxurious Amarena cherries to their vibrant fruit syrups, these offerings were not only incredibly delicious and exquisitely flavored but also remarkably versatile, proving their potential across a wide range of culinary applications in both sweet and savory dishes.

I was also particularly excited to rediscover Caviaroli drops, which I had the pleasure of tasting and writing about before. These exquisite spheres deliver an explosion of flavor the moment they burst in your mouth, transforming any dish into a gourmet experience. Caviaroli products represent superb artisan craftsmanship and innovative culinary technique.

3. Celebrating Local Businesses and Iconic Brands
A significant part of my Show experience involved celebrating and connecting with esteemed local businesses and iconic brands that define Chicago’s culinary heritage. These companies not only represent tradition but also continue to innovate, keeping the local food scene vibrant.
My journey through local favorites began with a delightful stop at Vienna Beef, a quintessential Chicago institution synonymous with classic hot dogs and a rich history. Their commitment to quality and flavor has made them a beloved staple for generations.

Next, I visited Turano Baking Co, renowned for its exceptional bread and bakery products that have graced tables across the region for decades. Their dedication to traditional baking methods combined with modern efficiency ensures consistently superior products.

And then a stop at Marconi, a name associated with quality Italian-American provisions that are a cornerstone of many Chicago kitchens and restaurants.

After sampling these savory delights, it was undeniably time for dessert! I was thrilled to experience the latest, FABI award-winning product from another cherished Chicago institution: Eli’s Cheesecake. Their innovative Mini Chocolate Chip Cookie Pies – delightful miniature pies featuring a perfectly baked brown sugar chocolate chip cookie dough crust, generously filled with their house-made chocolate ganache – are the perfect format of portable deliciousness, ideal for catering or individual indulgence.

Still on the topic of meeting local businesses being a highlight of my Show experience, I was absolutely delighted to connect with Wilder Fields, an innovative company based in Calumet City, IL. They specialize in growing a remarkable variety of delicious microgreens using highly sustainable methods. As a passionate microgreen enthusiast myself (you can find some of my articles and recipes on the topic here, here, here and here), I thoroughly enjoyed learning about Wilder Fields’ advanced innovative growing and packaging technology. Their commitment to freshness and environmental stewardship is truly impressive, and I eagerly look forward to potential collaborations in the future.

4. Exploring the World of Functional Beverages
Keeping energized and hydrated throughout the demanding days of the Show is crucial, and this year, I had the pleasure of exploring several exciting functional beverage options that catered to various needs.
I stopped for refreshing and invigorating drinks at the Try My T booth, which offered a delightful range of teas designed to provide specific benefits, from calming to energizing blends.

Further exploring fresh and wholesome options, I visited the Natalie’s Juice sampling station, where their commitment to fresh-pressed, high-quality juices truly shone through, offering pure and delicious hydration.

To ensure I stayed hydrated sustainably throughout the long days, I utilized my PATH refillable aluminum water bottle, whose innovative reps I had the pleasure of meeting at the Show. Their mission to reduce single-use plastics aligns perfectly with growing environmental consciousness.

As the clock neared 5 PM, marking the end of the Show day, I found myself increasingly tired and in need of a serious energy boost. Luckily, I stumbled upon Lotus Energy Drinks, a brand I had never tried before. I was immediately fascinated by the owner’s intriguing story (a former Karate Kid actor) and by the profound symbolism of the lotus flower, which represents purity and rebirth. This unique beverage provided exactly what I needed; I could feel a fresh supply of revitalizing energy flowing through my body, which had been exhausted after a long day of constant standing and walking. This truly transformative experience has undoubtedly made me a new fan of the functional beverage trend, appreciating their tangible benefits.
