Sweet Potato Toast is a tasty, naturally gluten-free breakfast that’s simple to prepare and nourishing.
Toasted sweet potato slices are topped with mashed avocado, ripe tomato and sliced hard‑boiled eggs for a filling morning meal that will carry you through to lunch.

This sweet potato toast combines satisfying flavor with nutrient-dense ingredients you’ll want for breakfast.
Is Sweet Potato Toast Healthy?
That depends on how you define healthy, but this version checks many boxes. Sweet potatoes provide fiber, vitamins and minerals. Avocado supplies heart-healthy fats and helps the body absorb fat-soluble vitamins (A, D, E and K). Hard‑boiled eggs add protein as well as additional vitamins and minerals.
The recipe is naturally gluten-free and can fit a Whole30 approach when ingredients are chosen accordingly. One or two slices topped as suggested make a balanced breakfast that helps keep hunger at bay.

With fiber from the sweet potato, healthy fats from avocado and protein from eggs, this breakfast feels wholesome and satisfying—an excellent way to start the day.
How do you make Sweet Potato Toast?
Begin by slicing a large sweet potato into 1/4‑inch rounds. A mandoline or a very sharp knife works best—take care when cutting because raw sweet potatoes can be firm.
Lightly brush or rub both sides of each slice with olive oil or avocado oil. Then choose your cooking method to turn the slices into toast:
- Air fryer — Place slices in a single layer in the basket and cook at 400°F (204°C) for about 15 minutes. This method is fast and gives nicely crisp edges.
- Toaster — Stand the slices upright in the toaster and toast until tender and slightly browned. Depending on your toaster, you may need 3–4 cycles; check after the second cycle to avoid burning.
- Oven or toaster oven — Preheat to 425°F (218°C). Arrange slices on a baking sheet, roast 10 minutes, flip and roast another 10–15 minutes until they reach your preferred doneness.
Once toasted, top the sweet potato slices as you like. Suggested toppings below create a fresh, balanced combination, but feel free to experiment.
Meal Prep on Sunday:
- Toast several sweet potato slices in advance and store them in an airtight container in the refrigerator. Reheat briefly in a skillet or microwave before adding toppings.
- Cook a batch of hard‑boiled eggs to keep on hand for breakfasts, snacks and salads throughout the week.
