Pumpkin Cookies Without Gluten: Soft, Spiced Fall Treats

How to make gluten-free pumpkin cookies

Step 1 – Mix wet ingredients.

Step 2 – Mix dry ingredients.

In a separate bowl, whisk the gluten-free all-purpose flour blend with baking powder, baking soda, salt, and pumpkin pie spice until evenly distributed.

  • In a medium bowl combine the brown sugar, granulated sugar, oil, pumpkin puree, eggs, and vanilla until fully incorporated.
  • Stir the dry ingredients into the wet ingredients until a thick dough forms. Use a small cookie scoop to drop mounds of dough onto the prepared baking sheet. Flatten the tops with the back of a spoon or moistened fingers so the cookies bake into even disks.
  • Bake for 11–13 minutes. Remove from the oven and transfer cookies to a cooling rack to cool completely before frosting.
  • To make the frosting, beat together room-temperature cream cheese, powdered sugar, and Greek yogurt until smooth. If the frosting is too thin, add more powdered sugar. Spread on cooled cookies and serve.
