As a young girl in primary school, a field trip to a local salt mine etched itself into my memory as a truly magical experience. I still recall the mixture of trepidation and immense curiosity that filled me as we approached the entrance, a gaping maw in the mountainside. Would there be hidden dangers, mythical underworld creatures, or whispering ghosts lurking in the cavernous depths? Instead, what awaited me was a realm of breathtaking natural artistry. Within the mountain’s embrace, the salt formed an ethereal landscape of various shapes and textures, their serene detachment, cool touch, and translucent beauty leaving an indelible impression. It was a revelation: who knew that something as common as salt could be so extraordinarily beautiful?
This vivid childhood memory resurfaced recently when I had the distinct pleasure of attending a holiday-themed dining event, graciously hosted by Morton Salt. The “Next Door Chef: Chicago” experience promised to be an exceptional opportunity to delve deeper into the diverse world of salt – not just its aesthetic appeal, but its practical power to elevate dishes in terms of flavor, texture, and visual presentation. It’s a culinary truth that salt can either make or completely break a meal. Yet, I confess, I had rarely paused to consider the remarkable versatility of salt or the strategic benefits of choosing Morton Kosher or Sea Salt over my everyday table salt. Driven by a desire to expand my culinary knowledge, I eagerly accepted Morton Salt’s invitation and brought my dear friend Marina along to share in this unique gastronomic adventure.
Unveiling Culinary Secrets: The Morton Salt Next Door Chef Event
The Morton Salt Next Door Chef event was an absolutely unparalleled experience. Imagine a culinary concept where, for a single day, an enthusiastic home cook has their apartment meticulously transformed into a professional-grade restaurant. Under the expert tutelage of acclaimed Chef Jason Vincent, this novice chef then crafts a delectable menu. Chef Vincent, the creative force behind Giant, a celebrated new restaurant in Logan Square, recently earned his establishment a coveted spot among Chicago’s top 10 hottest dining destinations. His presence ensured that this was not merely a cooking demonstration, but a masterclass in flavor and technique.

The star “next door chef” for the evening was Cara, a vivacious Chicago native whose condo became the charming, one-day-only pop-up restaurant, fittingly named “Cara’s.” From the moment we stepped inside, Cara and the entire staff greeted us with warm smiles and genuine enthusiasm, setting a wonderfully positive tone for the evening ahead. The transformation of Cara’s apartment was truly astounding. The ambiance was an exquisite blend of cozy warmth and refined elegance, achieved through tasteful wall decor and the soft, inviting glow of unobtrusive candlelight that permeated the dining room. Simultaneously, the impeccable table settings and professional service clearly signaled an upscale dining experience, demonstrating a meticulous attention to detail that rivaled any established restaurant.

A Symphony of Flavors: Appetizers and Main Courses
What better way to commence an upscale dining experience than with perfectly chilled margaritas, served in glasses beautifully rimmed with Morton Kosher Salt? These refreshing cocktails immediately highlighted salt’s ability to enhance and balance flavors, offering a tantalizing prelude to the culinary journey that lay ahead. The subtle saltiness perfectly complemented the drink’s tart and sweet notes, creating a truly invigorating start.


For our appetizer, we were treated to an exquisite dish of Brussels sprouts paired with crispy pecorino. This delightful creation featured bosc pears and Brussels sprouts, meticulously seasoned with Morton Kosher Salt and gently cooked in butter. A symphony of flavors unfolded with the addition of honey, almonds, plump golden raisins, and walnuts. The inherent sweetness of the raisins found a perfect counterpoint in the savory sharpness of the sliced pecorino. Grated ginger and fresh lemon juice contributed a bright, tantalizing tartness, tying all the components together beautifully. Chef Vincent’s brilliant touch was evident in the finishing flourish: a sprinkle of Morton Coarse Sea Salt. As the image below clearly illustrates, I wasn’t the only one enchanted by this starter. My friend Marina’s delighted expression perfectly mirrored my own enjoyment!

One of the most valuable insights I gained from Chef Vincent during this event was the art of properly basting and brining turkey. This simple yet transformative technique guarantees exceptionally tender and flavorful meat, a significant departure from often dry, under-seasoned poultry. Chef Vincent masterfully integrated various types of Morton Salt into his turkey brine, stock, and rub recipes, yielding truly spectacular results. He favored Morton Kosher Salt for its pure, natural flavor and its larger, perfectly structured crystals, which effectively penetrate the meat in the rub. For the turkey stock, he opted for Morton Fine Sea Salt, appreciating its rapid dissolving properties that prevent over-salting and ensure a balanced seasoning throughout the liquid.
The succulent turkey was expertly complemented by a vibrant, spicy rice side dish. Its core ingredients included peanuts, toasted and finely chopped Thai chili, roasted garlic, pungent ginger, and fresh cilantro. For dessert, we savored warm chocolate chip cookies, charmingly served straight from the pan – a rustic touch that perfectly complemented the cozy setting. As a final, inspired touch, Morton Coarse Sea Salt was delicately sprinkled over the cookies, providing an irresistible crunch and a nuanced flavor that elevated this classic treat to new heights.
