Essential Ingredients for Your Pan-Seared Chicken
Crafting this delightful pan-seared chicken with tomato wine sauce requires a handful of fresh, high-quality ingredients. Each component plays a crucial role in building the layered flavors that make this dish so special. From the lean protein to the aromatic herbs and vegetables, here’s what you’ll need:
- **Thin Boneless Skinless Chicken Breasts**: The ideal canvas for quick cooking and absorbing flavors.
- **Kosher Salt**: Essential for seasoning the chicken and bringing out the natural flavors of the sauce.
- **Freshly Ground Black Pepper**: Adds a subtle warmth and aromatic kick to both the chicken and the sauce.
- **Paprika**: Contributes a beautiful color and a mild, earthy flavor to the chicken’s crust.
- **All-Purpose Flour**: Creates a light, golden crust on the chicken, helping to seal in moisture and provide body for the sauce.
- **Salted Butter**: Crucial for sautéing the chicken and enriching the pan sauce with its creamy, rich notes.
- **Extra Virgin Olive Oil**: Pairs with butter for a higher smoke point during sautéing and adds a fruity depth.
- **Onion**: Forms the aromatic base of the sauce, providing a sweet and savory foundation.
- **Fresh Tomatoes**: The heart of the sauce, offering bright, tangy, and naturally sweet flavors.
- **Garlic**: A cornerstone of Mediterranean-inspired cooking, lending its distinctive pungent aroma and taste.
- **Tomato Paste**: Concentrates the tomato flavor, adding depth and umami to the sauce.
- **White Wine**: Deglazes the pan, introducing acidity and complexity, and helps to create a sophisticated pan sauce. Chardonnay or Pinot Grigio are excellent choices.
- **Fresh Basil**: The finishing touch, providing a fresh, peppery, and sweet aromatic lift that brightens the entire dish.
Crafting Your 20-Minute Chicken Dinner: Step-by-Step
One of the many joys of this quick chicken dish is how swiftly it comes together. To ensure a seamless cooking experience and make preparation incredibly easy, I highly recommend adopting the “mise en place” approach – have all your ingredients measured, chopped, and ready to go before you even turn on the stove. This proactive step guarantees a stress-free process and ensures you achieve simply the best chicken pan sauce every time.

- **Prepare the Chicken**: Generously season your chicken breasts with kosher salt, freshly ground pepper, and paprika. Then, lightly dredge them in all-purpose flour. This step not only enhances the flavor but also creates a beautiful golden crust and helps seal in moisture during cooking.
- **Sauté the Chicken to Perfection**: Heat a combination of salted butter and extra virgin olive oil in a large sauté pan. Once shimmering, add the dredged chicken breasts and sauté them until they are beautifully golden brown and cooked through. Remove them from the pan and cover loosely with foil to keep them warm and allow the juices to redistribute.
- **Build the Aromatic Base**: In the same pan, melt a bit more butter. Add the diced onion and cook until it becomes translucent, softening and releasing its sweet aroma.
- **Introduce the Tomatoes**: Stir in the chopped fresh tomatoes, allowing them to gently cook down and release their vibrant juices, forming the foundation of your rich sauce.
- **Deglaze and Reduce**: Add minced garlic and tomato paste, stirring constantly for about 30 seconds to deepen their flavors. Pour in the white wine, bringing the mixture to a low boil. Allow the sauce to reduce by about half, concentrating all those wonderful flavors into a cohesive, luscious consistency.
- **Finish with Flair**: Take the pan off the heat. Swirl in the remaining pat of butter for added richness and a silky texture. Finally, stir in the fresh basil, allowing its peppery sweetness to perfume the sauce. Season to taste with salt and pepper.
- **Serve and Enjoy**: Spoon the delicious tomato pan sauce generously over your perfectly sautéed chicken breasts. For an extra touch of freshness, sprinkle with more chopped fresh basil before serving.
It really is that easy to create a restaurant-quality meal at home!

Secrets to Perfectly Juicy Sauteed Chicken Breast
There’s nothing more disappointing than a dry, tough boneless chicken breast. Achieving that perfect balance of a golden-brown exterior and a moist, tender interior can seem like a culinary challenge, but with a few expert tips, you can master how to cook boneless chicken breast without drying it out. After years of perfecting chicken recipes for my personal chef clients, I’ve gathered invaluable insights to help you create the most succulent, juicy sauteed chicken breast every single time.

- **Achieve Uniform Thickness**: For truly even cooking, it’s paramount that your boneless chicken breasts are of a consistent size and thickness. If you have thicker pieces, butterfly them horizontally or place them between two sheets of plastic wrap and gently pound them to an even ½-inch thickness. This ensures every part cooks at the same rate, preventing thinner edges from drying out while the center finishes cooking.
- **Season Generously and Dredge Lightly**: Proper seasoning is not just for flavor; it also aids in browning. A liberal sprinkle of paprika, kosher salt, and pepper, followed by a light dredge in flour, creates a protective coating. This coating not only seals in juices but also facilitates the Maillard reaction, yielding that coveted beautifully golden-brown crust that adds texture and depth of flavor.
- **Sauté with the Right Fat and Heat**: Use a combination of salted butter and extra virgin olive oil for sautéing. The butter imparts a rich, nutty flavor and promotes browning, while the olive oil helps raise the smoke point, preventing the butter from burning too quickly. Cook the chicken breasts over medium-high heat for approximately 2 minutes per side. This quick, hot sear creates a delicious crust without overcooking the interior.
- **Trust Your Thermometer**: Boneless chicken breasts cook surprisingly fast. While visual cues are helpful, an instant-read digital thermometer is your best friend for guaranteed perfect doneness. Insert it into the thickest part of the chicken; once it registers 165°F (74°C), your chicken is perfectly cooked and safe to eat. Remove it immediately to prevent overcooking.
- **Allow for Resting**: Once cooked, transfer the chicken to a plate and loosely cover it with foil. Allow it to rest for 5-10 minutes. This crucial step allows the muscle fibers to relax and reabsorb the juices, ensuring a supremely moist and tender result.
Customizing Your Sauteed Chicken and Tomato Sauce
**Go Gluten-Free**: To adapt this recipe for a gluten-free diet, simply substitute the all-purpose flour with rice flour for dredging the chicken. Alternatively, you can skip dredging the chicken altogether, though be aware that it won’t develop the same characteristic golden-brown crust. If you skip dredging, you might consider thickening the pan sauce slightly with a cornstarch slurry at the end for desired consistency.
**Add a Kick of Spice**: For those who appreciate a bit of heat, introduce a pinch or two of red pepper flakes to the pan when you add the garlic. This simple addition will infuse the sauce with a delightful warmth without overpowering the other flavors.
**Choosing Your Wine**: When it comes to the white wine for the sauce, a dry, crisp variety is best. Chardonnay is my top recommendation for its balanced acidity and subtle fruit notes. Pinot Grigio is another excellent choice, offering a lighter, refreshing character. If you prefer not to cook with wine, a good quality chicken broth with a splash of white wine vinegar or lemon juice can provide a similar depth and acidity.
**Fresh vs. Dried Basil**: While fresh basil delivers the most vibrant flavor, in a pinch, you can substitute 1 teaspoon of dried basil for every 2 tablespoons of fresh basil. Remember that dried herbs are more concentrated, so use them sparingly and adjust to taste.
**Beyond Chicken: Sauce Versatility**: Don’t limit this incredible fresh tomato sauce to just chicken! Its bright and savory profile makes it equally delicious spooned over a variety of seafood like shrimp, scallops, salmon, or halibut. It also pairs wonderfully with other proteins such as pork tenderloin or pork chops, and even a perfectly seared steak. For a wholesome vegetarian meal, serve it over grilled or steamed vegetables like zucchini, eggplant, or asparagus.

Storing and Reheating Your Sauteed Chicken Dinner
One of the practical benefits of this sauteed chicken breast recipe is how well it holds up as leftovers. Like many sauced chicken dishes, any remaining portions can be stored safely in an airtight container for up to 4 days in the refrigerator. I highly recommend using sturdy glass storage containers, as they are excellent for preserving flavor and are microwave-safe.
Thanks to its delicious pan sauce, this dish reheats beautifully without losing its moisture or flavor. For the best results when reheating:
- **Microwave Method**: Place your desired portion of chicken and sauce on a plate. Loosely cover the plate (a microwave-safe lid or damp paper towel works well) to help retain moisture and prevent splattering. Heat on 70% power for 1 minute. After the initial minute, continue heating in 30-second intervals, stirring the sauce gently between each interval, until the chicken and sauce are thoroughly heated through and steaming.
- **Stovetop Method**: For reheating larger portions or if you prefer the stovetop, transfer the chicken and sauce to a non-stick pan over medium-low heat. Add a tablespoon or two of chicken broth or water to help loosen the sauce. Cover the pan and gently heat, stirring occasionally, until everything is warmed through. Avoid high heat to prevent the chicken from drying out.
This careful reheating ensures your leftovers taste almost as good as they did on the first night, making it perfect for meal prep!

Ingredients
- 8 thin boneless skinless chicken breasts about 2 pounds total
- kosher salt
- pepper
- paprika
- ¼ cup all purpose flour
- 3 tablespoons salted butter divided
- 2 tablespoons extra virgin olive oil divided
- ½ cup diced onion
- 2 cups chopped tomato
- 3 garlic cloves minced
- 1 tablespoon tomato paste
- ⅓ cup white wine ~ I suggest Chardonnay or Pinot Grigio
- 2 tablespoons chopped fresh basil plus more for serving
Instructions
-
Place the chicken breast on a work surface. Sprinkle both sides with kosher salt, pepper, and paprika. Place the flour on a plate. Lightly dredge both sides of the seasoned chicken in the flour. Set aside.
-
In a large sauté pan over medium heat, add 1 tablespoon salted butter and 1 tablespoon extra virgin olive oil. When the butter has melted, sauté the chicken breast. You will have to do this in 2 or 3 batches adding more of the oil if needed. Sauté for about 2 minutes per side or until golden brown. Use an instant read digital thermometer to check if the chicken is done. The internal temperature should be 165 degrees F. Remove the chicken to a plate and cover with foil to keep warm.
-
In the same pan over medium heat, add 1 tablespoon of butter. When it has melted, add the onion. Season with a pinch of kosher salt and a few grinds of pepper. Sauté for 3 to 4 minutes or until translucent.
-
Add the tomatoes to the pan and sauté another 2 to 3 minutes.
-
Add the garlic and tomato paste, stir and sauté for 30 seconds. Pour in the wine and bring the sauce to a low boil. Reduce the sauce to about one half. This should take 2 to 3 minutes.
-
Remove the pan from the heat. Add the remaining tablespoon of butter and stir to melt. Add the basil and stir to combine. Season to taste with salt and pepper.
-
Pour any of the juices on the plate with the chicken into the sauce and stir to combine. Top the chicken with the sauce and more chopped basil.

Notes
- To make the recipe gluten-free, use rice flour. You can skip dredging the chicken, but it won’t have the same golden brown crust.
- Add a little spice to the recipe by adding red pepper flakes along with the garlic.
- Chardonnay is my first choice for wine in the sauce. Pinot Grigio can also be used in the sauce.
- In a pinch, 1 teaspoon dried basil can be substituted for the fresh basil.
- The fresh tomato sauce is also delicious over shrimp, scallops, pork tenderloin or chops, salmon, halibut, steak and any vegetable.
