Gluten-Free Nilla Wafer Recipe: Homemade Vanilla Wafers

How to make gluten-free nilla wafers from scratch

  1. Combine ingredients: In a medium bowl, whisk together 1 ½ cups fine almond flour, ½ cup tapioca starch, 6 tablespoons sugar, 1 teaspoon cream of tartar, ½ teaspoon baking soda, and ½ teaspoon salt. Add 4 tablespoons melted unsalted butter, 1 large egg, and 4 teaspoons vanilla extract. Stir until the mixture forms a cohesive dough. Cover and chill for about 30 minutes to firm up the dough, which makes it easier to shape.
  2. Preheat the oven: Preheat your oven to 325°F (162°C) and line two baking sheets with parchment paper.
  3. Shape the cookies: Portion the dough using about 1 ½ teaspoons per cookie. The easiest method is to scoop a tablespoon of dough and cut it in half, or use a small cookie scoop. Roll each portion into a ball and gently press it with your finger to form a flat disc. Place the cookies 2 inches apart on the prepared sheets.
