Those summers were a continuous feast, where we indulged in nature’s bounty, stuffing ourselves with an endless array of fresh produce straight from the garden.

From Greenhouse to Kitchen: A Culinary Challenge Inspired by Freshness
Following our engaging conversation, Sarah generously presented me with a beautiful gift box brimming with Pure Flavor’s exquisite produce. This wasn’t just a gift; it was an exciting culinary challenge: to create at least one dish that truly celebrated the essence of summer and the incredible quality of these fresh ingredients. The possibilities were endless, and my kitchen quickly transformed into a creative hub!

The vibrant flavors and undeniable freshness of the Pure Flavor vegetables sparked such profound inspiration that I ended up developing not one, but three distinct dishes! Today, I am thrilled to share the recipe for the first creation: a delectable pairing of baked lean salmon with their exceptional heirloom tomatoes and the increasingly popular hulled millet. This recipe stands out for its simplicity, incredible flavor profile, and its light, refreshing nature – making it an ideal choice for a delightful summer lunch or a healthy dinner.
Recipe: Delicious Salmon with Heirloom Tomatoes and Millet Salad
Ingredients (Serves 4):
- 2 lb fresh salmon fillets
- 4 heirloom red tomatoes
- 4 heirloom yellow tomatoes
- 1 handful fresh thyme, finely chopped
- 1 handful fresh chives, finely chopped
- Juice and zest of one lemon
- 1 cup dry hulled millet
- 1 cup chopped cucumber
- 1/2 cup extra virgin olive oil (divided)
- 1 cup fresh chopped parsley (divided)
- 4 sprigs green onion, chopped
- 1 sprig fresh mint, chopped finely
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- Prepare a large baking pan by lining it with aluminum foil. Place the cleaned salmon fillets onto the foil.
- Carefully slice both the red and yellow heirloom tomatoes. Arrange a few slices artfully over each salmon fillet, alternating colors to create a visually appealing presentation. Ensure the fish is completely covered by the tomato slices. Set the remaining tomato slices aside for the accompanying salad.
- Generously sprinkle the finely chopped fresh thyme and chives over the salmon. These fresh herbs are crucial for imparting a vibrant aroma and depth of flavor that dried herbs simply cannot replicate. Add the fresh lemon zest, followed by salt and freshly ground black pepper to taste.
- Seal all edges of the aluminum foil to create a tightly enclosed packet around the salmon. This technique steams the fish, keeping it incredibly moist and flavorful. Place the pan in the preheated oven and bake for approximately 30 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is baking, begin preparing the millet. Bring 2 cups of water to a rolling boil in a medium saucepan. Rinse the hulled millet thoroughly in cold water and drain it well. Add the rinsed millet to the boiling water.
- Reduce the heat to medium, cover the saucepan, and cook the millet for about 20 minutes, or until all the water has been completely absorbed and the millet is tender. Once cooked, remove the millet from the pan and transfer it to a mixing bowl to cool slightly.
- To make the vibrant millet salad, gently combine the warm millet with the chopped cucumber, 1/2 cup of extra virgin olive oil, and 1/2 cup of the fresh chopped parsley. Squeeze in the lemon juice and season with salt and pepper to taste. Mix everything until thoroughly combined, ensuring the flavors are well distributed.
- For the refreshing tomato salad, take the reserved tomato slices and cut them into bite-sized pieces. Place them in a medium salad bowl. Add the chopped green onion, finely chopped mint, and the remaining 1/2 cup of fresh chopped parsley. Season with salt and pepper to taste. Mix gently until all ingredients are well incorporated.
- Once the salmon is done baking, carefully remove it from the oven and allow it to rest for a few minutes in its foil packet. This allows the juices to redistribute, ensuring a perfectly moist fish.
- Unwrap the salmon, cut it into 4 equal portions, and serve immediately alongside generous portions of the fresh millet salad and the heirloom tomato salad.
- Enjoy this healthy, flavorful, and incredibly satisfying summer meal!
