Crispy Gluten-Free Waffle Recipe for Light, Fluffy Breakfast

These Gluten Free Waffles deliver everything you expect from a classic waffle: crisp edges, a tender, chewy interior, and a warm vanilla-cinnamon aroma that fills the kitchen while they cook.

With fewer than 10 ingredients and about 20 minutes of hands-on time, these waffles make an easy, satisfying gluten-free breakfast any morning of the week.

As they cook, the scent of vanilla and cinnamon will make the house smell irresistible. Top with fresh fruit, a pat of butter, pure maple syrup, or a side of sausage for a complete meal the whole family will enjoy.

Ingredients

  • Gluten-Free Flour: Use a reliable gluten-free flour blend. If you make your own mix it stores well for future recipes. Store-bought all-purpose gluten-free blends also work if you prefer.
  • Buttermilk: Traditional buttermilk gives great flavor and tenderness, but any milk (regular or dairy-free) can be substituted.
  • Oil: Neutral oils such as avocado or vegetable oil work well. You can also use melted butter or coconut oil.
  • Vanilla Extract: Use store-bought or homemade vanilla for added depth of flavor.
  • Other: eggs, baking powder, salt, sugar, and a pinch of cinnamon (optional).

Instructions

  1. In a large bowl, whisk together the dry ingredients and then add the wet ingredients, mixing until combined. Allow the batter to rest for 15 minutes to hydrate the flour and thicken slightly.
  2. Preheat and lightly grease your waffle iron.
  3. Pour about 3/4 to 1 cup of batter into the waffle plate (amount varies by waffle iron size), close the lid, and cook for roughly 5 minutes or until steam subsides and the waffle is golden. Many waffle irons have an indicator light to show doneness.
  4. Carefully remove the waffle with a fork or tongs and serve immediately with your favorite toppings.

These waffles are delicious plain, but try them with fresh berries, homemade whipped cream, powdered sugar, strawberry jam, maple syrup, or chocolate for a special treat—the options are endless.

Top Tip

For extra-crispy waffles, leave them on the waffle iron an additional minute or two until the crust reaches your desired crunch.

Storage

You can freeze leftover waffles for convenience. Place cooled waffles in a freezer-safe bag or container for up to 3–4 months. To reheat, thaw in the refrigerator and warm on a baking sheet in a 350°F (176°C) oven for about 10 minutes, or reheat straight from frozen in a toaster oven or regular toaster until heated through.

  • 1 ¾ cups gluten-free flour blend
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • teaspoon ground cinnamon optional
  • 1 ½ cups buttermilk or any milk of your choice
  • 2 large eggs
  • ¼ cup oil or melted butter
  • 1 teaspoon vanilla extract

Instructions

  • Whisk the ingredients together in a large mixing bowl and let the batter rest for 15 minutes.
  • Heat the waffle iron and coat it with cooking spray. Pour about ¾ to 1 cup of the batter into the plate of the waffle maker and close it. Cook for approximately 5 minutes or until steam no longer escapes. (Most waffle makers come with a light that lets you know when they are done. Waffle makers come in different shapes and sizes so the amount of batter will vary.)
  • Remove the waffle using a fork or tongs, top with your favorite fruit, butter and/or syrup and enjoy!
