Vegetarian Chickpea Salad
Ingredients
- 2 cups organic dried chickpeas
- 1/3 cup extra virgin olive oil
- 1 tbsp + 1 1/4 tsp freshly squeezed lemon juice
- 1 tsp honey
- 1/2 cup crumbled feta cheese
- 1/2 cup olives, sliced
- 1/2 cup marinated artichokes, cut into medium-size pieces
- 1/2 cup roasted red peppers, cut into medium-size pieces
- 1/4 cup cilantro leaves, packed
- Salt and pepper to taste

Soak dried chickpeas in a large bowl with plenty of water overnight (10-12 hours). Ensure they are fully submerged, as they will expand significantly. In the morning, drain the chickpeas, rinse them thoroughly, and transfer to a good-sized saucepan. Cover with fresh water and bring to a boil. Reduce heat and simmer for about 1 hour, or until the chickpeas are tender. Add extra water during cooking if needed to keep them covered.

While the chickpeas are cooking, prepare the vinaigrette. In a small bowl or Pyrex cup, whisk together the extra virgin olive oil, freshly squeezed lemon juice, and honey. Season with salt and pepper to taste. Set aside.

Once the chickpeas are cooked and cooled slightly, place them in a large mixing bowl. Add the crumbled feta cheese, sliced olives, marinated artichoke pieces, and roasted red pepper pieces.
