Unforgettable Flavors and Rhythms: A Retrospective on Chicago Gourmet 2018’s “Rock the Fork” Experience

As the curtains drew on 2018, it felt as though the year had vanished in a whirlwind of activity and cherished memories. For my family, the past twelve months were remarkably full, punctuated by significant personal milestones and exhilarating professional opportunities. Among the year’s standout moments was the incredible opportunity to interview Chef Rick Bayless, a true titan in the culinary world. Yet, undeniably, the most joyous highlight of all was welcoming our baby Alex into the family. With an eye towards a new year brimming with good health and a plethora of outstanding culinary adventures, it’s only fitting to reflect on one of the year’s most monumental food festivals: Bon Appétit presents Chicago Gourmet. This review is long overdue, a testament to the delightful chaos that newborn life brings, but the memories of this exceptional event are as vivid as ever.
“Rock the Fork”: Chicago Gourmet 2018’s Electrifying Theme
In 2018, Chicago Gourmet, the Windy City’s premier culinary festival, outdid itself with an innovative and catchy theme: “Rock the Fork.” This concept was ingeniously crafted to celebrate the intrinsic connection between Chicago’s vibrant food scene and its rich musical heritage. Set against the iconic backdrop of Millennium Park, the festival transformed into an immersive sensory experience. Nearly 250 of the city’s most celebrated restaurants and talented chefs converged, showcasing their culinary prowess at numerous pavilions. Attendees had the unique opportunity to savor an extraordinary array of dishes while being serenaded by an eclectic mix of musical genres, from the soulful depths of blues and classical melodies to invigorating international, pop, and rock rhythms. This harmonious blend of exquisite tastes and captivating sounds truly brought the “Rock the Fork” theme to life, offering a truly unforgettable experience for every palate and ear.

A Different Vibe: Weather, Crowds, and the Evolution of the Experience
This marked my second attendance at Chicago Gourmet, having previously reviewed the 2017 edition here. My experience in 2018 diverged significantly from the previous year, primarily due to the weather. After enduring sweltering heat and oppressive humidity in the fall of 2017, the 2018 festival brought cooler, cloudier conditions, even a brief spell of rain. While not ideal for capturing pristine photographs, this milder weather proved far more conducive to navigating the sprawling festival grounds, allowing for more comfortable movement between pavilions and making standing in line a much less arduous task. However, the sheer popularity of Chicago Gourmet also meant noticeably longer queues this time around. Patience was certainly a virtue, as securing a coveted bite from popular spots like Mexico’s Pavilion or the innovative Cadillac Doughnut Bar often required a wait of approximately 20 minutes. Yet, as is often the case with such exceptional culinary events, the anticipation only heightened the reward.

Beginning the Culinary Journey: A World of Flavors Unfolds
As anticipated, every moment spent waiting in line was ultimately justified by the sensational flavors that followed. My 2018 Chicago Gourmet adventure commenced with a delightful vegetarian dish from Gaylord Fine Indian Cuisine, masterfully prepared by Executive Chef Trinidad Paez. These savory vegetarian samosas, generously filled with a flavorful blend of potatoes and peas, were elevated with a crisp topping of okra chips and a dollop of cooling raita, all served alongside perfectly cooked garbanzo beans. It was a delicious and vibrant start, showcasing the rich, aromatic spices characteristic of Indian cuisine.

Following this satisfying start, I made a brief, refreshing stop at the Japan Information Center, where I sampled delicate salmon accompanied by fresh lima beans. The dish was light, elegant, and provided a lovely contrast to the robust flavors of the samosas.

After these initial tastings, I took my first mini-break, settling onto the lush lawn of Millennium Park. It was the perfect moment to reflect, enjoy the atmosphere, and savor the light yet impactful start to a day full of culinary exploration.

Exploring Diverse Culinary Landscapes: Pavilions and Standouts
My next destination was the bustling Mariano’s Tasting Pavilion, a hub of diverse flavors.

Among the many offerings at Mariano’s, the dish that truly captivated my palate was the mini pork gyros, a creation by Chef Jimmy Bannos Jr. of Piggie Smalls Gyro Shop. Having encountered my share of dry pork preparations in the past, I was delighted to find that the meat in this gyro was anything but. It was incredibly succulent, bursting with a harmonious blend of spices that made it addictively delicious. The pita bread, soft and perfectly textured, served as an ideal complement, making this a truly memorable bite.

A Deep Dive into Mexico’s Culinary Excellence at the Guadalajara Pavilion
Energized by these initial delightful discoveries, I made my way to Mexico’s Tasting Pavilion, consistently one of my favorite sections of Chicago Gourmet. This year, the pavilion celebrated the vibrant culinary scene of Guadalajara, hosting several acclaimed chefs from the region.

Every single dish I sampled at this pavilion was nothing short of outstanding. Chef Tomas Zertuche Diaz of Anita Li’s presented a remarkable tostada featuring smoked crab, a creamy black bean dip, delicate avocado mousse, finely pickled garlic, and vibrant fish roe, all brought together by a unique paste crafted from the ashes of 32 different types of peppers. The complexity and depth of flavor were simply astounding.

Next, I savored the exquisite beef tartare, artfully prepared with chili and crema by the world-renowned Chef Darren Walsh. His creation was a testament to precision and bold flavor, a true highlight of the festival.

The culinary journey through Mexico’s pavilion concluded with a dazzling passion fruit tart from La Postreria’s pastry chef, Fernanda Covarrubias. This dessert was a revelation: light, perfectly buttery, subtly sweet, yet utterly bursting with the fresh, pungent flavor of passion fruit. Each dish at this pavilion felt like a natural, yet enchanting, progression of the preceding one, creating an amazing and cohesive taste experience that truly celebrated the culinary artistry of Guadalajara.

Beyond the Bites: Engaging Culinary Entertainment
Just as I did in the previous year, I decided to take a brief intermission from the continuous tastings to immerse myself in the vibrant atmosphere of the cooking demo theater. Here, I attended an incredibly upbeat and engaging demonstration by the dynamic Chef Stephanie Izard. The demo was expertly emceed by Adam Rapoport, Editor-in-Chief of Bon Appétit, adding an extra layer of culinary insight and witty banter. True to the “Rock the Fork” theme of 2018, Chef Izard concluded her culinary presentation with an unexpected and delightful singing performance. She was joined on stage by the equally charismatic Chef Graham Elliot, several members of her dedicated staff, and even a full choir, creating an unforgettable and incredibly feel-good moment that perfectly encapsulated the joyous spirit of the festival.

Sweet Endings and More Savory Delights: The Afternoon Continues
Refreshed and re-energized by the memorable demonstration, I bravely re-entered the bustling tasting pavilions, ready to tackle one of the longest lines of the afternoon: the Cadillac Doughnut Bar. This visually stunning pavilion featured an impressive doughnut wall, offering a tantalizing array of flavors. What made this experience truly special was the opportunity for visitors to design their very own custom doughnuts, with expert, on-site guidance from the talented bakers of Do-Rite Donuts.

While I’m not typically drawn to overly colorful doughnuts, the afternoon rain had left me yearning for a cheerful burst of sweetness. So, I enthusiastically opted for the most vibrant sprinkles I could find, a perfect pick-me-up to brighten the day!

After a quick but satisfying stop at the Thai Tasting Pavilion, where the exotic aromas alone were invigorating…

…I serendipitously re-encountered the talented chefs from Gaylord Fine Indian Cuisine, just in time to sample their Chana Masala. As a fervent enthusiast of garbanzo beans (chickpeas) – truly, I could incorporate them into every meal – I was immensely impressed by this Chana Masala. It delivered a powerful punch of flavor, characterized by its sophisticated spiciness and a refined blend of textures. This dish evoked vivid memories of the delicious food I used to enjoy during my time living in the UK, bringing a wave of fond nostalgia with every savory bite.

The Grand Finale: Last Bites and Lasting Impressions
Even as the day began to draw to a close, my culinary exploration was far from over. I managed to squeeze in a few more delightful tastings: savory Porter Road pork steak sliders from the exclusive media tent, followed by a blissful return to the butter cake from Mastro’s Restaurants. Having tried this cake the previous year and been completely captivated by its rich, moist perfection, I simply *had* to experience it again – it was indeed that good, a true testament to its irresistible appeal.

To round out this epicurean journey, I indulged in some last-minute brisket sliders from Old Crow Smokehouse, their smoky richness providing a comforting warmth. And finally, from House of Blues, a delightful jalapeño & cheese cornbread offered a perfect balance of savory and a hint of spice, a fitting end to a day of incredible flavors.

Looking Forward: Anticipation for Chicago Gourmet’s Future
My time at Chicago Gourmet 2018 was an absolute blast, a whirlwind of tantalizing tastes, inspiring chef interactions, and a festive atmosphere. The “Rock the Fork” theme truly elevated the experience, creating a harmonious blend of food and entertainment that few festivals can match. I eagerly anticipate what the 2019 edition will bring – who will grace Mexico’s Tasting Pavilion with their culinary artistry, which innovative dishes will enchant my palate, and whose cooking demonstration will prove to be the most spectacular. This exceptional food festival genuinely encapsulates it all: an impressive roster of illustrious chefs and participants, a discerning and loyal public whose passion for food is palpable, and a prime location within the fantastic, food-loving city of Chicago. I will undoubtedly return to Chicago Gourmet next year, fueled by an insatiable hunger for more knowledge, culinary innovation, and inspiring new flavors. Goodbye for now, Chicago Gourmet – and rest assured, I will see you again very soon!
