Ingredients

  • 2 sticks unsalted butter cut into slices
  • 8 oz. unsweetened baker’s chocolate broken into small pieces
  • 2 cups granulated sugar
  • 1.5 cups light brown sugar
  • 5 large eggs
  • 1 tablespoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon espresso powder optional
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C). Line a 9″ x 13″ baking pan with lightly greased parchment paper, leaving an overhang for easy removal.
  • Place the butter and unsweetened baker’s chocolate in a microwave-safe bowl. Microwave for 1 minute, then continue in 30-second intervals, stirring between each, until fully melted and smooth. Set aside to cool slightly.

  • Using a stand mixer or hand mixer, beat the eggs with the light brown sugar and granulated sugar on high for 10 minutes, until the mixture is light, fluffy, and pale. Reduce speed to low and mix in the vanilla and the melted chocolate until combined. Add the flour and salt, then mix briefly on low just until incorporated.

  • Fold in the semi-sweet chocolate chips with a spatula, scraping the bowl to ensure even distribution.

  • Pour the batter into the prepared pan and smooth the surface. If desired, sprinkle a few extra chocolate chips on top. Bake for about 30 minutes — the edges should pull away slightly from the pan and the center should still look a bit underbaked for the fudgiest texture.

  • Remove the pan from the oven and let it cool on a heat-safe surface for 15–20 minutes. Use the parchment overhang to lift the brownies from the pan and cut into 24 small squares or 12 larger bars once slightly cooled.
