Chicago stands as a culinary beacon, renowned worldwide for its iconic contributions to American gastronomy. Beyond the bustling city life and architectural marvels, the true heart of Chicago beats in its vibrant food culture. From the legendary Chicago-style hotdogs, bursting with flavor and “dragged through the garden,” to the robust and satisfying Italian beef sandwiches, stacked high with thinly sliced, juicy roast beef, the city offers an unparalleled feast for the senses. For anyone visiting my childhood home in the Windy City suburbs, or simply craving an authentic taste of Chicago, exploring these culinary treasures is an absolute must.

Indeed, pizza reigns supreme as the undisputed champion of comfort food across Chicago’s bustling metropolitan area and its charming suburbs. The city proudly boasts a diverse range of pizza styles, each commanding a special place in the hearts (and stomachs) of locals and visitors alike. The iconic deep-dish pizza, with its thick, pastry-like crust and generous layers, often comes to mind first. Then there’s the traditional thin-crust, known for its crispy base and square-cut slices, perfect for a casual bite. Yet, standing distinctively among these, is the majestic Chicago stuffed pizza. This particular style elevates the pizza experience to an entirely new level, offering a more enclosed, pie-like structure that promises a glorious explosion of flavor with every single bite. While quick fixes like these tortilla pizzas are great for weeknights, nothing quite compares to the rich, layered experience of a homemade Chicago stuffed pizza for a truly satisfying meal.

Why You’ll Fall in Love with Chicago Stuffed Pizza

Imagine biting into a pizza where every mouthful is a symphony of rich flavors and textures. That’s precisely what awaits you with Chicago-style stuffed pizza. This isn’t just a pizza; it’s a culinary marvel featuring not one, but two gorgeously buttery and cheesy crusts. These golden layers act as a delicious fortress, encasing an incredibly generous, some might even say ‘obscene,’ amount of premium mozzarella cheese. But the magic doesn’t stop there. Nestled within this cheesy haven is a dazzling array of savory fillings, with our preferred combination of perfectly seasoned Italian sausage and earthy mushrooms taking center stage. The entire magnificent creation is then crowned with a vibrant, thin layer of slow-simmered tomato sauce, providing a burst of tangy freshness, and a final delicate sprinkling of mozzarella cheese, which melts into a beautiful golden brown during baking. The result is an unforgettable experience where the robust flavors of the fillings, the stretchy embrace of the cheese, and the irresistible crunch and chew of the double crust converge in perfect harmony. It’s a truly indulgent experience that makes this pizza a beloved classic, perfect for family dinners or entertaining guests.

Essential Ingredients for Crafting Your Chicago-Style Stuffed Pizza

Creating an authentic Chicago-style stuffed pizza at home begins with selecting the right ingredients. Each component plays a vital role in achieving that distinct flavor and texture that makes this pizza so legendary. Here’s a detailed look at what you’ll need to assemble this magnificent dish:

  • Rapid Rise Dry Yeast: Crucial for a quick and effective dough rise, ensuring a tender yet sturdy crust.
  • Sugar: A small amount is essential to activate the yeast and add a subtle hint of sweetness to the crust.
  • Warm Water: The ideal temperature (110-115 degrees F) is key for activating your rapid rise yeast.
  • Kosher Salt: Enhances all the flavors in the dough and fillings, bringing out their best.
  • All-Purpose Flour: The foundation of our robust double crust, providing the perfect structure and chew.
  • Large Eggs & Large Egg Yolks: These are the secret to our incredibly rich, tender, and distinctly buttery crust, adding moisture and a beautiful golden hue.
  • Salted Butter (Melted): Infuses the crust with an incomparable buttery flavor and helps achieve its desirable crispy-chewy texture.
  • Dried Minced Onions: A subtle but powerful flavor enhancer for the crust, adding depth and a savory aroma that makes this pizza truly unique.
  • Grated Parmesan Cheese: Blends into the crust, contributing a wonderful umami depth and an extra layer of cheesiness.
  • Cornmeal: Essential for dusting the deep-dish pan, preventing sticking, and adding a signature slight crunch to the bottom crust.
  • Block Mozzarella Cheese (Shredded): This is non-negotiable! A generous pound of low-moisture, part-skim block mozzarella (not fresh) is key for that iconic, melt-in-your-mouth, stretchy cheese pull. Shredding it yourself makes all the difference in texture and flavor.
  • Italian Sausage (Crumbled and Cooked): The cornerstone of our savory filling. Choose mild or spicy based on your preference, ensuring it’s fully cooked and thoroughly drained before adding to the pizza.
  • Marinara Sauce: A high-quality marinara is paramount. Whether you opt for a luscious homemade marinara sauce bursting with fresh basil or a premium store-bought pizza sauce, ensure it has a vibrant, well-balanced tomato flavor to complement the richness of the pizza.

Mastering Your Chicago Stuffed Pizza: Expert Tips for Perfection

Crafting an authentic Chicago stuffed pizza at home is an incredibly rewarding experience. To ensure your culinary endeavor yields a truly spectacular result, here are some invaluable expert tips to guide you through each crucial step:

  • The Crust: The Foundation of Flavor and Texture!
This pizza crust isn’t just a container; it’s a star in its own right – tender, crispy, decadently buttery, and infused with savory cheese. Achieving this perfection is surprisingly easy, especially with the right approach. The dough, thanks to its rich egg and butter content, will be quite stiff, making a standing mixer your best friend for hands-off kneading. This machine handles the heavy work, ensuring a perfectly developed gluten structure that translates into an ideal texture. Despite its stiffness, don’t be intimidated; this dough is remarkably easy to roll out. For the smoothest experience, consider using a high-quality stainless steel rolling pin that has been chilled in the refrigerator. A cold rolling pin glides effortlessly over the dough, preventing sticking and allowing you to achieve those perfectly even, double crusts in record time. This attention to the crust will pay off immensely, delivering a depth of flavor and a satisfying chew that elevates the entire pizza.

  • The Cheese: Quality and Preparation are Key!
When it comes to Chicago stuffed pizza, the cheese is king, and quantity is queen! This recipe calls for a whopping pound of shredded mozzarella cheese to generously fill a 14-inch pizza. While fresh mozzarella is undeniably delicious in many dishes, it’s best to skip it for this particular recipe. Fresh mozzarella has a higher water content, which can release moisture during baking and potentially make your pizza soggy. Instead, always opt for a block of low-moisture, part-skim mozzarella cheese. The true secret to superior melt and flavor lies in shredding the block yourself. Pre-shredded cheeses often contain anti-caking agents that can hinder a perfectly smooth, gooey melt. By shredding it fresh, you ensure an unadulterated, creamy texture and a richer taste. Plus, consider it a bonus arm workout while you’re preparing your masterpiece!
  • The Extra Pizza Fillings: Customize Your Masterpiece!
Our family’s go-to combination for stuffed pizza often features savory Italian sausage and tender sautéed mushrooms, a classic pairing that never disappoints. However, the beauty of homemade pizza lies in its customizability. Feel empowered to experiment and add your absolute favorite ingredients to create your unique masterpiece. If you’re incorporating vegetables such as onions, bell peppers, zucchini, or spinach, a crucial step is to sauté them beforehand. Raw vegetables contain a lot of water, which, when cooked inside the enclosed pizza, will release steam and moisture, inevitably leading to a watery and potentially soggy pizza. Pre-sautéing not only removes excess moisture but also concentrates their flavors, ensuring they contribute deliciously without compromising the integrity of your magnificent crust. Other fantastic additions include cooked ground beef, pepperoni, or even a mix of different cheeses. Just remember the golden rule: pre-cook or sauté any high-moisture ingredients!

This impressive double-crust pizza yields a substantial 14-inch pie, perfect for feeding a family or a hungry crowd. To ensure clean and effortless portions, I highly recommend using a large wheel pizza cutter, which effortlessly glides through the thick crust and abundant fillings, creating 8 generous, satisfying slices. While just one slice is often enough to fill even the heartiest appetite, who can resist the temptation of a second when it’s this delicious? It’s a common (and perfectly understandable) indulgence! Just be sure to strategically save a little room, because a perfect meal often calls for a sweet ending. Consider pairing your pizza feast with a scoop of creamy no-churn cookies and cream ice cream or a rich, decadent slice of Texas sheet cake to complete the ultimate comfort food experience.

The Ultimate Method for Reheating Leftover Stuffed Pizza

While it’s genuinely hard to imagine any of this magnificent stuffed pizza becoming ‘leftovers’ (a truly rare occurrence!), should you find yourself with an extra slice or two, rest assured they reheat splendidly, retaining much of their original charm. The best method for reviving your pizza to its crispy-crust, gooey-cheese glory involves a simple sauté pan. Here’s how to do it: Place your cold slices of pizza into a dry sauté pan over medium heat. Allow them to heat uncovered for a few minutes, which helps to crisp up the bottom crust. After this initial crisping, add just a few drops of water to the pan around the pizza slices (not directly on top of the pizza itself). Immediately cover the pan with a lid. The steam generated from the water will gently warm the cheese and toppings, ensuring they become melty and delicious again, while the covered pan maintains the heat, preventing the crust from drying out. Continue heating for a few more minutes until the cheese is bubbling and the crust is perfectly re-crisped. This technique ensures a deliciously fresh-tasting slice every time.

Equipment

  • Stand Mixer
  • Rolling Pin
  • Deep Dish Pizza Pan (14-inch)
  • Pizza Stone

Ingredients

  • 1 package (¼ ounce) rapid rise dry yeast
  • 1 tablespoon sugar
  • cup warm water (between 110 – 115 degrees F)
  • 1 tablespoon kosher salt
  • 4 ½ cups all-purpose flour
  • 1 large egg
  • 3 large egg yolks
  • ½ cup salted butter (melted)
  • ¼ cup dried minced onions
  • cup grated Parmesan cheese
  • Cornmeal (for dusting)
  • 1 pound block of mozzarella cheese (shredded from block)
  • ½ pound crumbled and cooked Italian sausage
  • 2 cups homemade marinara or your favorite store-bought pizza sauce

Instructions

  • To make the dough:
  • In the bowl of a standing mixer fitted with a dough hook, combine the rapid rise yeast, sugar, and warm water. Let this mixture sit for 5 minutes to activate the yeast.
  • With the mixer on low speed, gradually add the kosher salt and all-purpose flour, about a half cup at a time. Mix thoroughly until the dough is somewhat dry and crumbly.
  • Next, add the whole egg, egg yolks, melted butter, dried minced onions, and grated Parmesan cheese. Mix until all ingredients are well combined. Increase the mixer speed to low and knead for 8 minutes. Alternatively, knead the dough by hand for 8 minutes until smooth and elastic.
  • Form the dough into a ball. Place the dough in a large, lightly oiled bowl, cover it with plastic wrap, and then with a clean kitchen towel. Let the dough rise in a warm place for 1 hour, or until doubled in size.
  • To assemble the pizza:
  • Preheat your oven to 450 degrees F (232 degrees C). Place a pizza stone on the middle rack of the oven to heat up.
  • Lightly sprinkle cornmeal on the bottom of a 14-inch deep-dish pizza pan. This helps prevent sticking and adds texture.
  • Divide the risen pizza dough in half. On a very lightly floured surface, roll out one piece of the dough into a 16-inch circle.
  • Carefully lay the rolled-out dough into the bottom of the prepared deep-dish pan, pressing it up the sides to form a crust.
  • Sprinkle ¾ of the shredded mozzarella cheese evenly over the bottom dough, making sure to leave the outermost 1 inch of the dough clear of cheese.
  • Distribute the crumbled and cooked Italian sausage on top of the mozzarella cheese layer.
  • Roll out the remaining piece of dough into another 16-inch circle. Gently lay this second dough circle evenly over the fillings and bottom dough. Roll and crimp the edges of both crusts together to seal the pizza (refer to the photo in the post for visual guidance).
  • Spread about ¾ cup of your marinara or pizza sauce on top of the upper crust. Finish by sprinkling the remaining mozzarella cheese over the sauce.
  • Carefully transfer the pizza pan to the preheated oven with the pizza stone. Bake for 25 to 30 minutes. Begin checking the pizza at 20 minutes; it’s done when the crust is golden brown and the cheese on top is slightly charred in spots.
  • Remove the pizza from the oven and let it cool for at least 5 minutes before slicing. This allows the cheese and fillings to set.
  • Cut into generous wedges. Warm additional marinara or pizza sauce and serve on the side for dipping, if desired. Enjoy your homemade Chicago masterpiece!

Notes

  • The dough is stiff but easy to roll: Use a standing mixer for kneading. A chilled stainless steel rolling pin will make rolling the dough effortless and prevent sticking, allowing you to achieve perfectly thin and even crusts in no time.
  • Choose wisely for the cheese: For the best melt and texture, always use a block of low-moisture, part-skim mozzarella cheese and shred it yourself. Avoid fresh mozzarella as its high water content can lead to a soggy pizza.
  • Prepare your fillings: If you plan to add vegetables like onions, peppers, or zucchini, it’s crucial to sauté them before incorporating them into the pizza. This step removes excess moisture and concentrates their flavors, preventing your magnificent pizza from becoming watery.
