Equipment

Ingredients

For the cauliflower mash:

  • 1 medium cauliflower (cut into florets, about 4 to 5 cups)
  • 2 garlic cloves (minced)
  • 2 tablespoons salted butter
  • ¼ cup Parmesan cheese
  • Kosher salt (to taste)
  • Pepper (to taste)

For the meat and vegetable filling:

  • 1 tablespoon extra virgin olive oil
  • 1 cup chopped yellow onion
  • 2 cups sliced mushrooms
  • 3 garlic cloves (minced)
  • 1 pound ground turkey
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon all-purpose flour
  • ¼ cup red wine
  • 1 10-ounce bag frozen mixed vegetables
  • 1 tablespoon chopped fresh parsley
  • Paprika (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Make the cauliflower mash: Fill a large pot with water and bring to a boil. Add the cauliflower florets and minced garlic and cook for about 10 to 15 minutes, or until the cauliflower is very tender. Drain the cauliflower thoroughly in a colander and return it to the pot. Add the salted butter and Parmesan cheese, then mash until smooth and creamy. Season to taste with kosher salt and pepper. Set aside.
  3. Make the meat and vegetable filling: In a large sauté pan over medium heat, add the extra virgin olive oil. Once the oil is heated, add the chopped onion, sliced mushrooms, and minced garlic. Sauté for 3 to 4 minutes, or until the onions are translucent and the mushrooms begin to soften and release their moisture.
  4. Add the ground turkey, 1 teaspoon kosher salt, and ½ teaspoon pepper to the pan. Cook until the turkey is thoroughly browned and crumbled, breaking it up with a spoon as it cooks, about 5 to 6 minutes. Stir in the Worcestershire sauce and tomato paste, mixing well.
  5. Sprinkle the all-purpose flour over the ground turkey mixture and stir to incorporate it completely, cooking for about 1 minute.
  6. Pour in the red wine and cook for 2 to 3 minutes, stirring, until the liquid is slightly reduced and thickened. Stir in the frozen mixed vegetables and fresh chopped parsley. Continue to cook until the vegetables are heated through.
  7. Divide the meat and vegetable filling evenly between four 2-cup glass containers or other oven-safe individual dishes. Top each portion generously with the prepared mashed cauliflower. Sprinkle a light dusting of paprika over the cauliflower topping for color.
  8. Bake for 20 to 25 minutes, or until the filling is bubbling hot and the cauliflower mash is lightly golden. Carefully remove from the oven and serve immediately.

  • Sub in frozen cauliflower: While fresh cauliflower is preferred for the mash, frozen cauliflower florets can be used in a pinch. Ensure they are well-drained after cooking to avoid a watery mash.
  • Use your favorite ground meat: Ground turkey is used here for a lighter option. Ground beef, veal, lamb, pork, or a combination are excellent substitutes for the meat filling, offering varied flavor profiles.
