The Joy of Seasonal Eating

In regions like the Garden State (New Jersey, my home), eating well during the summer months is effortless thanks to the incredible local produce. Farmers’ markets become a treasure trove of peak-season ingredients. This salad is designed to highlight these treasures. With minimal preparation, the inherent deliciousness of these fresh vegetables shines through, proving that sometimes, the simplest recipes are the most satisfying. It’s a healthy, vibrant side dish that pairs wonderfully with grilled meats, seafood, or as a light lunch on its own.

Beyond its incredible taste, this avocado corn salad offers numerous benefits. It’s incredibly quick to prepare, often taking less than 20 minutes from start to finish, making it ideal for busy weeknights or last-minute potlucks. It’s also remarkably healthy, packed with essential vitamins, minerals, and healthy fats from the avocado. Whether you’re planning a BBQ menu, a Fourth of July celebration, or just a simple summer meal, this recipe is a guaranteed crowd-pleaser.

Key Ingredients for Your Perfect Summer Salad

Creating this delicious summer salad starts with selecting the freshest, highest-quality ingredients. Each component plays a vital role in the overall flavor profile and texture. Here’s a closer look at what you’ll need:

  • Fresh Corn on the Cob: The star of the show! Opt for sweet, tender corn in season. If fresh corn isn’t available, frozen sweet corn can be a good substitute in a pinch, just be sure to thaw and drain it well.
  • Extra Virgin Olive Oil: A good quality extra virgin olive oil forms the base of our light vinaigrette, adding a fruity depth of flavor and richness.
  • Sherry Vinegar: Unlike more acidic red or white wine vinegars, sherry vinegar boasts a complex, slightly nutty, and delicately sweet flavor profile. It enhances the vinaigrette without overpowering the fresh vegetables. If you don’t have sherry vinegar, apple cider vinegar makes a delicious and readily available alternative.
  • Dijon Mustard: A touch of Dijon mustard emulsifies the vinaigrette, giving it body and a subtle tang that complements the sweetness of the corn.
  • Kosher Salt and Freshly Ground Pepper: Essential seasonings to highlight and balance all the flavors. Adjust to your personal preference.
  • Ripe Avocado: Provides a creamy texture and healthy fats, adding a luxurious feel to the salad. Ensure it’s ripe but firm enough to dice easily.
  • English Cucumber: Chosen for its fewer seeds and less watery flesh compared to standard cucumbers. It adds a refreshing crunch without diluting the salad’s flavors. If an English cucumber isn’t available, simply scoop out the seeds from a regular cucumber.
  • Cherry Tomatoes: These small, juicy tomatoes burst with sweet and tart flavor. Halving them releases their juices, adding moisture and vibrant color. You can also use grape tomatoes or even chopped heirloom tomatoes.
  • Red Onion: Finely diced red onion provides a mild, pungent kick that balances the sweetness of the corn and tomatoes.
  • Fresh Basil: The aromatic, peppery notes of fresh basil are indispensable for a true summer flavor. Thinly sliced basil leaves elevate the entire dish.

Expert Tips for Making the Best Summer Salad

Even simple recipes benefit from a few expert tips to ensure the best possible results. Here are some suggestions to help you create a truly spectacular summer avocado, corn, cucumber, and tomato salad:

Mastering Corn Preparation

  • Safely Cutting Corn Kernels: To prevent corn niblets from scattering across your kitchen, stand a shucked ear of corn vertically on its end in a large, deep bowl. Using a sharp chef’s knife, carefully slice downwards along the cob. The bowl will catch all the kernels as they fall, making cleanup a breeze.
  • Blanching Corn for Maximum Sweetness: While this recipe calls for boiling, a quick blanch in boiling water for just 2 minutes is perfect for fresh corn. This flash cooking brightens its color, enhances its sweetness, and gives it a tender-crisp texture. Immediately rinsing it with cold water after draining stops the cooking process and preserves that perfect texture.
  • Frozen Corn Option: If fresh corn isn’t available, good quality frozen sweet corn can be a lifesaver. Ensure it’s thawed completely and patted dry to remove excess moisture before adding it to the salad. You won’t need to cook it further once thawed.

Enhancing Your Vinaigrette and Ingredients

  • The Beauty of Sherry Vinegar: As mentioned, sherry vinegar offers a unique, complex, and subtly sweet flavor that elevates this vinaigrette. It’s less harsh than other vinegars and truly rounds out the dressing. Don’t be afraid to experiment with other fruit-based vinegars if sherry isn’t on hand; white balsamic or even a good quality red wine vinegar can work, though the flavor profile will differ slightly.
  • Preventing Avocado Browning: Avocados are notorious for browning quickly once cut. To keep your diced avocado looking fresh and vibrant, toss it with a teaspoon or so of the sherry vinegar (or lemon/lime juice) immediately after dicing, before combining it with the rest of the salad ingredients. This acid bath helps to slow down oxidation.

Serving and Storage Guidelines

  • Serving Fresh: This salad is truly at its best when served as soon as it’s made. The ingredients are at their crispest, and the vinaigrette’s flavors are most vibrant.
  • Chilling for Later: While best fresh, this salad is still absolutely delicious when chilled in the refrigerator for up to 24 hours. The flavors have a chance to meld even further. However, the avocado may start to soften slightly and the cucumber might release a bit more water over time. Stir gently before serving if stored.

Ingredients

  • 6 ears of fresh corn
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons sherry vinegar
  • 1 teaspoon Dijon mustard
  • 1 ½ teaspoons salt
  • ½ teaspoon freshly ground pepper
  • 1 avocado, diced
  • 1 medium English cucumber, diced in ½ inch pieces
  • 1 pint cherry tomatoes, cut in half
  • ⅓ cup finely diced red onion
  • 15 basil leaves, thinly sliced

Instructions

  1. Shuck the corn and slice the kernels off the cobs. (See notes below for a tip on how to do this easily.)
  2. Bring a large pot of water to a boil and add the corn kernels. Cook for 2 minutes. Drain the corn into a colander, then rinse immediately with cold water to stop the cooking process. Set aside to cool.
  3. In a large mixing bowl, whisk together the extra virgin olive oil, sherry vinegar, Dijon mustard, salt, and pepper to create your vinaigrette.
  4. Add the cooked and cooled corn, diced avocado, diced cucumber, halved cherry tomatoes, finely diced red onion, and thinly sliced fresh basil to the bowl with the vinaigrette.
  5. Gently toss all the ingredients to ensure the vegetables are evenly coated with the delicious vinaigrette.
  6. Serve immediately for the best fresh flavor and texture, or cover and refrigerate. The salad remains delicious when kept chilled for up to 24 hours.

Notes

  • Tip for Slicing Corn: To easily slice kernels off the cob without a mess, stand an ear of corn on its end in a large, deep bowl. Using a sharp chef’s knife, slice horizontally down the side of the cob, allowing the corn kernels to fall directly into the bowl.
  • Keeping Avocado Green: To prevent your diced avocado from turning brown, toss it with a teaspoon or so of the sherry vinegar (or a squeeze of lemon/lime juice) immediately after cutting it and before adding it to the rest of the salad ingredients.
  • Best Served Fresh: While the salad is best enjoyed freshly made, it is still delightful when kept chilled in the refrigerator for up to 24 hours. The flavors will continue to meld.
