Ingredients

  • 1 lb wild Alaskan Pacific cod
  • 1.5 lb bite-size potatoes
  • 1/2 cup thinly sliced green onion
  • 1/3 cup chopped dill
  • 2 tbsp unsalted butter
  • 1/3 cup vegetable oil (for roasting the potatoes)
  • 1/3 cup vegetable oil (for the vinaigrette)
  • 1 tbsp + 1 1/4 tsp white wine vinegar
  • 1 tbsp dried oregano
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350F. Combine potatoes, oil, oregano, and salt and pepper in a medium-size bowl. Mix until thoroughly coated. Spread potatoes evenly on a roasting pan lined with parchment paper. Bake for approximately 30 minutes, or until tender when pierced with a fork.
  • While the potatoes are baking, gently pan-fry the cod in butter over medium heat for about 3 minutes per side, turning once. Once cooked, remove from the pan and let cool slightly. Flake the fish into chunks. In a separate small bowl, whisk together a simple vinaigrette using oil, vinegar, chopped dill, and salt and pepper to taste.
  • In a medium-sized salad bowl, combine the roasted potatoes, flaked cod, and green onion. Pour the dill vinaigrette over the ingredients and mix gently until well combined. Taste and adjust seasoning with extra salt and/or pepper if desired. Serve warm or at room temperature.
