Ingredients
- 1 baguette roll
- 1 Pure Flavor baby eggplant
- 2 medium-size cremini mushroom caps
- 1 Pure Flavor Aurora Sweet pepper, cut in half and core removed

- 1/3 cup crumbled feta cheese
- 1/3 cup sour cream

- 4 slices Emmental cheese

Instructions

Chop the oregano and thyme and place in a medium-size bowl. Cut the eggplant into slices about 1/4in thick and add them to the bowl. Also add the mushroom caps, extra virgin olive oil and salt and pepper to taste. Combine the ingredients until the veggies are coated in oil and chopped herbs uniformly. Store in the refrigerator overnight for optimal flavor development.

The following day, remove the bowl from the fridge. Take the eggplant slices and mushroom caps out of the bowl and spread them evenly on a preheated nonstick grill pan. Grill the vegetables over a medium heat for about 25 minutes or until golden brown and soft, ensuring to turn them once during cooking for even charring. Once cooked to perfection, transfer the veggies from the pan to a plate lined with paper towel to absorb any excess oil or moisture, ensuring a crisp panino.

Brush the Pure Flavor Aurora Sweet pepper halves with extra virgin olive oil. Use the same grill pan to grill the peppers for approximately 20 minutes, or until they are soft and slightly charred, turning once during cooking. Once tender, remove the pepper halves from the grill and set aside with the other cooked vegetables.

In a medium-size bowl, combine the sour cream, crumbled feta cheese, and chopped watercress. Mix thoroughly with a spoon until all ingredients are well combined and the spread is uniform.

Using a brush, lightly moisten the inside of both roll halves with extra virgin olive oil. Spread a generous layer of the sour cream, feta, and watercress mixture onto both halves. On the half intended for the bottom of the panino, place two slices of Emmental cheese. Follow with 4-5 slices of the grilled eggplant, then layer the grilled pepper halves on top of the eggplant, and finally, add the grilled mushroom caps.
