Preheat the oven. Rub the pork tenderloin with Dijon mustard and brown sugar.

Make the easy spice mixture with chili powder, smoked paprika, onion powder, garlic powder, kosher salt and pepper. Rub it on the pork.

Grab a cast iron skillet or an oven safe large sauté pan. Over medium high heat, sear the pork tenderloin until golden brown on all sides.

Place the skillet or sauté pan in the oven. Roast the pork until the internal temperature is 145 degrees on a digital thermometer. Remove from the oven and let rest.

Make salsa while the pork cooks. Combine the mango, cucumber, red bell pepper, red onion, jalapeno, parsley, olive oil and lime juice. Season to taste with kosher salt and pepper.

  • Let the pork rest about 5 to 10 minutes before slicing it into medallions. This will redistribute the juices throughout the meat. The heat of the pan will continue to cook the pork. Make sure to remove the pork from the cast iron skillet or sauté pan.
  • For a less spicy salsa, remove the seeds and ribs of the jalapeno before adding it.
