Rainbow Cupcakes are a colorful, crowd-pleasing dessert ideal for birthdays, themed parties, or any cheerful celebration. They’re surprisingly simple to make and look impressive with minimal effort—just a box of white cake mix, food coloring, white frosting, and a sprinkle or two.

These cupcakes are perfect for a rollerskating party, a rainbow-themed event, or a unicorn or mermaid celebration. Simply swap the colors to match your theme and you’ll have an eye-catching treat in no time.
How to make rainbow cupcakes
Begin by preparing the white cake mix according to the package directions. Pour the batter into separate bowls—one bowl per color you plan to use—to divide it evenly.
I used four colors: purple, blue, yellow, and pink. Add a few drops of gel or liquid food coloring to each bowl and stir until the color is fully incorporated.

Line a muffin tin with cupcake liners. To create the marbled rainbow effect, drop spoonfuls of each colored batter into the liners, layering the colors until each liner is about two-thirds full. You can alternate colors or repeat layers—either way, the colors will blend into a pretty marble pattern as they bake.
Bake according to the time recommended on your cake mix, usually around 18–22 minutes, or until a toothpick inserted in the center comes out clean. Remove the cupcakes from the oven and allow them to cool completely before frosting.
Frost with white frosting so the colors remain bright. Pipe the frosting on with a piping bag for a neat finish, then top with sprinkles for a festive touch. Slice a cupcake in half to reveal the colorful marbled interior.

Tips for success
- Use a white cake mix and white frosting to keep the colors true and vibrant.
- Gel food coloring gives richer, more vivid hues without thinning the batter.
- Fill each liner about two-thirds full to prevent overflow while still producing tall cupcakes.
- Make cupcakes up to two days in advance and store them in the refrigerator until ready to serve.
- To freeze, wrap cooled cupcakes individually in plastic wrap and store in a freezer bag for up to three months.
