  • 1 tablespoon rice wine vinegar
  • 3 pounds beef stew chunks
  • 2 tablespoons cornstarch

Instructions

  • In the Instant Pot inner pot, combine the thinly sliced red onion, diced jalapeño, chopped garlic, ¼ inch slices of ginger root, reduced sodium soy sauce, brown sugar, beef stock, sesame oil, and rice wine vinegar. Stir these ingredients together thoroughly.
  • Add the beef stew chunks to the pot and stir to ensure they are well-coated with the sauce mixture. Securely close and seal the Instant Pot lid. Select the Manual (or Pressure Cook) setting and adjust the pressure to High. Set the cooking timer for 35 minutes.
  • Once the cooking cycle is complete, allow the pressure to release naturally for 15 minutes. This natural release period is crucial for tenderizing the beef. After 15 minutes, carefully manually release any remaining pressure by turning the venting valve to the “Venting” position until the float valve drops completely.
  • While the Instant Pot is releasing pressure, prepare the cornstarch slurry: In a small bowl, mix the 2 tablespoons of cornstarch with 2 tablespoons of cold water until a smooth paste forms. Set this aside.
