Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup whole hazelnuts, toasted and skinned
- 1/8 cup ground hazelnuts
- 4 tbsp unsalted butter, at room temperature
- 1 medium-sized egg (for the dough)
- 1 medium-sized egg, lightly beaten (for brushing the tops of the cookies)
- 1 tsp ground cinnamon
- Zest of 1 medium-sized lemon
- Pinch of salt

Spread the whole hazelnuts on a baking sheet and toast them in the oven for about 8-10 minutes, or in a pan on the stovetop over medium heat, until they are fragrant and lightly golden-brown.
